Creamy Saffron Shrimp with Gnocchi and Caramelized Onion Recipe

- 1 tablespoon butter
- 1 large onion, thinly sliced
- 6 mushrooms, sliced
- 1 teaspoon brown sugar
- 1 (16 ounce) package potato gnocchi
- 20 peeled and deveined large shrimp (21 to 30 per pound)
- 3 tablespoons reduced-fat sour cream
- 1 teaspoon paprika
- 1 pinch saffron
- Salt to taste
- cup grated Parmesan cheese
- 2 tablespoons shredded fresh basil
Directions
Follow these steps to create this delicious dish:
- In a large skillet, melt the butter over medium heat. Once the butter is melted, add the sliced onion, mushrooms, and brown sugar. Cook, stirring occasionally, until the onions are deeply caramelized, about 10 minutes. Remove the caramelized onions from the skillet and set them aside on a plate.
- Meanwhile, bring a large pot of lightly salted water to a boil over high heat. Once the water reaches a rolling boil, add the gnocchi. Let them cook until they float to the top, about 3 minutes. Once the gnocchi are cooked, drain them and keep them warm.
- Return the same skillet to the stovetop over medium-high heat and add the shrimp. Cook the shrimp, stirring frequently, until they turn pink and are no longer translucent in the center, about 5 minutes.
- Once the shrimp are cooked, add the reserved caramelized onions, sour cream, paprika, and saffron to the skillet. Stir well and cook until the mixture begins to simmer.
- Gently fold in the cooked gnocchi. Season with salt to taste and continue to stir until everything is well combined and heated through.
- Transfer the gnocchi mixture to a serving dish. Top with grated Parmesan cheese and shredded fresh basil before serving.
