Crab Chowder Recipe
Ingredients

Original recipe (1X) yields 6 servings
- 2 tablespoons unsalted butter
- 1 yellow onion, finely chopped
- 4 stalks celery, cut into 1/4-inch slices
- 1 tablespoon finely chopped fresh thyme
- Salt and ground black pepper, to taste
- 7 potatoes, cut into 1/2-inch pieces
- 2 cups whole milk
- 1 (15 ounce) can fish broth
- 1 cup heavy whipping cream
- 1 (8 ounce) bottle clam juice
- 1 pounds Dungeness crab meat, chopped
Directions
Step 1: Melt butter in a large pot over medium heat. Add chopped onion, celery, thyme, salt, and pepper. Stir and cook until the onion and celery start to soften, about 5 minutes.
Step 2: Add potatoes, milk, fish broth, heavy cream, and clam juice to the pot. Stir to combine, and bring the mixture to a simmer. Cook until the potatoes are soft, approximately 10 minutes.
Step 3: Once the potatoes are soft, pour the soup mixture into a blender in batches (no more than half full). Secure the lid and pulse a few times before blending until smooth.
Step 4: Return the pureed soup back to the pot. Stir in the chopped Dungeness crab meat. Let the soup cook for another 5 minutes or until heated through.
Step 5: Taste and season with additional salt and pepper as desired.
