Ingredients

  • pound hot sausage, fried and drained
  • cup sliced black olives
  • cup sliced green olives
  • 1 cup whole kernel corn
  • 1 cup chopped stewed tomatoes
  • cup sliced fresh mushrooms
  • 1 cup cubed Cheddar cheese
  • 1 cup cooked white rice

Directions

  1. Preheat the oven to 350F (175C).
  2. In a 2-quart casserole dish, combine the sausage, black olives, green olives, corn, tomatoes, mushrooms, cheese, and rice.
  3. Mix all ingredients together well.
  4. Place the casserole in the oven and bake for 30 minutes at 350F (175C).
