Grandma's Creamy Potato Salad Recipe
Ingredients
- 1 pounds red potatoes, peeled
- 1 cups mayonnaise
- 1 cup chopped celery
- cup chopped onion
- 1 tablespoon white vinegar
- 1 tablespoon prepared yellow mustard
- 1 teaspoon salt
- teaspoon ground black pepper
- 4 hard-cooked eggs, chopped
- 1 teaspoon paprika, or to taste (Optional)
Directions
Step 1: Place the potatoes in a large pot and cover them with salted water. Bring the water to a boil over medium-high heat.
Step 2: Once boiling, reduce the heat to medium-low and let the potatoes simmer until they are tender, approximately 20 minutes.
Step 3: Drain the potatoes and allow them to cool for 10-15 minutes until they are cool enough to handle. Then, cut the potatoes into cubes.
Step 4: In a large bowl, combine mayonnaise, chopped celery, onion, white vinegar, yellow mustard, salt, and pepper. Stir until well mixed.
Step 5: Add the cooled, cubed potatoes to the bowl and mix gently to combine with the dressing.
Step 6: Fold in the chopped hard-cooked eggs, and sprinkle with paprika if desired.
Recipe Tip
If you prefer, you can substitute white potatoes for red potatoes, use salad dressing instead of mayonnaise, and swap white vinegar for cider vinegar.

Quite similar to my own recipe, although my mom showed me the trick of adding the Mayo/mustard blend when the potatoes are still warm. It truly does elevate the dish!

I prefer using Miracle Whip and pickle relish in my potato salad, and I'm not a fan of adding eggs to it.
