Air Fryer Roasted Broccoli and Cauliflower Recipe

Ingredients

  • 3 cups broccoli florets
  • 3 cups cauliflower florets
  • 2 tablespoons olive oil
  • teaspoon garlic powder
  • teaspoon sea salt
  • teaspoon paprika
  • 1 teaspoon ground black pepper

Directions

  1. Preheat an air fryer to 400F (200C).
  2. Place broccoli florets in a large, microwave-safe bowl and microwave on high for 3 minutes. Drain any accumulated liquid.
  3. Add cauliflower, olive oil, garlic powder, sea salt, paprika, and black pepper to the bowl with broccoli. Mix well to combine.
  4. Transfer the mixture to the air fryer basket.
  5. Cook in the preheated air fryer for 12 minutes, shaking the basket halfway through cooking to ensure even browning.

Absolutely enjoyed it! I was confident this dish would be a hit at home since broccoli is my husband's favorite vegetable, and cauliflower is mine, and we both adore paprika. The only adjustment I made was adding 1 tablespoon of water to the broccoli before microwaving it, although it may not have been necessary; I just felt uneasy about cooking the broccoli in the microwave without any liquid. Delicious! Even my son, who usually avoids vegetables, thoroughly enjoyed the roasted or pan-fried broccoli prepared using this convenient and less messy air fryer method. After microwaving, I tossed the broccoli with olive oil and garlic salt before air frying, and they disappeared before even making it to the table. I may have cut them too small as they almost burned, so next time I'll check on them 2 minutes earlier. I will definitely make this recipe again, and next time I'll experiment with Italian seasoning, garlic powder, and a sprinkle of Parmesan cheese once they're done cooking.

Delicious! I went a bit overboard with three shakes of powdered habanero, but it still turned out great. I added the broccoli halfway through cooking without microwaving it first. I could eat this all day without feeling guilty. Thanks for the fantastic recipe, Nikki!
