Maple Pineapple Tofu

Ingredients

  • cup maple syrup
  • cup pineapple juice
  • 2 tablespoons brown mustard
  • 1 teaspoon soy sauce (optional)
  • 1 tablespoon olive oil
  • 1 (8 ounce) firm tofu, drained and cubed
  • 1 teaspoon sesame seeds (optional)

Directions

  1. In a small bowl, whisk together maple syrup, pineapple juice, brown mustard, and soy sauce (if using). Set aside.
  2. Heat olive oil in a large skillet over medium-high heat.
  3. Add the cubed tofu to the skillet and cook, stirring frequently, until the tofu is evenly browned.
  4. Pour in the maple syrup mixture and stir well to coat the tofu.
  5. Continue cooking, stirring occasionally, until the glaze has thickened and reduced.
  6. Sprinkle with sesame seeds before serving (optional).
