Shrimp and Peanut Butter Noodles Recipe
Peanut Butter Shrimp Udon Noodles
Original recipe (1X) yields 4 servings
Ingredients:
- cup peanut butter
- 2 tablespoons light soy sauce
- 2 tablespoons Chinese black vinegar
- 2 tablespoons white sugar
- 1 tablespoon sesame oil
- 10 ounces dried Japanese udon noodles
- 20 uncooked large shrimp, peeled, deveined, tails left intact
- 1 cup broccoli florets
- cup chopped roasted peanuts (Optional)
Directions:
Step 1: In a small bowl, combine peanut butter, soy sauce, black vinegar, sugar, and sesame oil. Stir well until the sauce is smooth and all ingredients are well incorporated. Set aside.
Step 2: Bring a large pot of water to a boil. Add the udon noodles and cook for 5 minutes, following the package instructions.
Step 3: Once the noodles are cooked, add the shrimp to the boiling water and noodles. Cook the shrimp for about 3 minutes, or until they turn pink and opaque.
Step 4: Turn off the heat, but leave the pot on the burner. Add the broccoli florets to the hot water, then cover the pot. Let the broccoli steam for 2 to 3 minutes.
Step 5: Drain the noodle mixture and transfer everything into a large serving bowl.
Step 6: Pour the prepared peanut butter sauce over the noodles and shrimp mixture. Toss everything gently to ensure an even coating of the sauce.
Step 7: Garnish with the chopped roasted peanuts (optional) before serving.
Tips:
- Black vinegar and sesame oil can usually be found at most Asian grocery stores.
