Jamaican Fried Snapper Recipe

Fried Red Snapper with Pickled Vegetables

Ingredients

  • 1 (1 1/2 pound) whole red snapper, cleaned and scaled
  • Salt and freshly ground black pepper, to taste
  • 1 quart vegetable oil for frying
  • 1 teaspoon vegetable oil
  • white onion, sliced
  • large carrot, peeled and cut into thin strips
  • 1 teaspoon minced garlic
  • cup white vinegar
  • 1 tablespoon water
  • teaspoon salt
  • habanero pepper, seeded and minced
  • 1 sprig fresh thyme, leaves stripped
  • 1 allspice berry, cracked
  • 1 pinch brown sugar

Directions

  1. Pat the fish dry and cut 3 small slits on each side of the fish. Season the fish evenly with salt and pepper.
  2. Heat 1 quart of vegetable oil in a large skillet over medium-high heat until the oil begins to smoke. Fry the fish for about 5 minutes on each side, or until golden brown and crispy. Once done, remove the fish and place it on a paper towel-lined plate to drain excess oil.
  3. In a separate skillet, heat 1 teaspoon of vegetable oil over medium-high heat. Add the sliced onion, carrot strips, and minced garlic. Cook and stir the vegetables for about 1 to 2 minutes until they begin to soften.
  4. Pour in the white vinegar, water, salt, minced habanero pepper, thyme leaves, cracked allspice berry, and a pinch of brown sugar. Stir well and let the mixture simmer for about 5 minutes, or until the liquid has reduced slightly.
  5. Once the liquid has thickened, spoon the onion and vegetable mixture over the fried fish. Serve immediately and enjoy!

This is a good and tasty fish. In my opinion, the sauce was a bit vinegary, so next time I`ll use less vinegar. Habanero pepper is unavailable here, so I used jalapeno pepper. I sauted the vegetables a little more than the recipe says. Very good, easy to make and unexpensive dish, will make often, thanks.

I used Maine Redfish filets. This recipe would work well with a white fish. I added sweet peppers instead of a habanero; garlic salt instead of minced. I cooked the veggies first, then the filets for more control over the outcome. Served with penne noodles, but would work well with rice.

This was an easy dish to prepare. The flavor was very simple and delicious. I like the simplicity of the flavors. The snapper is complemented well by the spicy-tangy kick from the pickled veggies and peppers. Definitely use 1/4 cup of vinegar (as seen on the video) not 1/2 cup if you don't want the vinegar to overpower your taste buds!

I love this recipe super simple and great tasting. Stick to the recipe, but use a little bit of cooking common sense, which is instill in us folks that grew up on dirt roads in the woods/country. Okra and tomatoes go well with this dish, also some FuFu. Enjoy!
