Instant Pot Swiss Steak Recipe
Ingredients:
- 1 pounds bottom round steak, 1 inch thick and trimmed of fat
- Salt and freshly ground black pepper, to taste
- cup all-purpose flour
- 2 tablespoons avocado oil, divided (or as needed)
- 1 green bell pepper, chopped (Optional)
- 1 medium onion, chopped
- cup carrot, chopped
- cup chopped celery
- 2 cloves garlic, finely chopped
- cup Merlot wine
- 2 cups canned chopped Italian-style tomatoes in juice
- 1 tablespoon Worcestershire sauce
- 1 teaspoon salt
- 1 teaspoon oregano
- 1 teaspoon paprika
Directions:
- Pat the steak dry with paper towels, then cut it into four 4-inch pieces. Season with salt and freshly ground black pepper.
- Place the flour in a shallow bowl. Dredge the steak pieces in the flour, shaking off any excess.
- Turn on a multi-functional pressure cooker (like an Instant Pot) and select the Saut function. Heat 1 tablespoon of avocado oil in the pot. Working in batches, sear the steak in the hot oil until browned, about 2 minutes per side. Transfer the browned steak to a warm plate and set aside.
- Add the remaining 1 tablespoon of avocado oil to the pot. Cook and stir the chopped bell pepper, onion, carrot, and celery in the hot oil until the onion becomes soft and translucent, about 3 to 4 minutes. Stir in the garlic and cook for another minute until fragrant.
- Pour in the Merlot wine to deglaze the pot, scraping up any browned bits from the bottom.
- Stir in the chopped tomatoes, Worcestershire sauce, 1 teaspoon of salt, oregano, and paprika.
- Return the seared steak to the pot, pushing it down into the tomato mixture to ensure its well-covered.
- Close and lock the lid of the pressure cooker. Select the manual pressure setting according to the manufacturers instructions and set the timer for 30 minutes.
- Allow the pressure to build up for 10 to 15 minutes. Once the cooking cycle is complete, let the pressure release naturally for about 5 minutes.
- Carefully open the valve to release any remaining pressure, which should take another 5 minutes. Unlock and remove the lid.

I extended the pressure cooking time by an additional 15 minutes to further tenderize the meat. I also incorporated half a cup of beef stock and opted for smoked paprika instead of regular. The result was fantastic, at least according to my taste buds!

The gravy was absolutely delightful! The meat was incredibly tender and practically melted in my mouth. I would have given it a perfect 5-star rating, but unfortunately, I was out of carrots and celery at the time, so I had to get creative and substitute with extra green peppers, basil, and parsley. To round out the dish, I added small halved potatoes during the final 3 minutes of cooking. I'll definitely be making this again with the recommended veggies next time. By the way, I used the old-fashioned stovetop pressure cooker for this recipe.
