Pan-Fried Steak with Marsala Sauce Recipe

Beef Chuck Steaks with Marsala Sauce
Ingredients:
- 4 (8-ounce) beef chuck steaks, well trimmed
- Salt and pepper to taste
- 2 cloves garlic, crushed
- cup Marsala wine
- cup chicken broth
- 3 tablespoons butter
- teaspoon dried rosemary, crushed
Directions:
- Heat a large, heavy skillet over high heat for about 2 minutes, or until it becomes very hot.
- Season both sides of the steaks with salt and pepper according to your taste.
- Place the steaks in the hot skillet and immediately reduce the heat to medium-high. Cook the steaks for 4 minutes on the first side.
- Flip the steaks over and cook for an additional 4 to 6 minutes, depending on how you prefer your steaks done. Once cooked, transfer the steaks to a platter and cover them with aluminum foil to keep warm.
- Remove the skillet from the heat. Quickly saut the crushed garlic in the residual heat for 1 to 2 minutes until fragrant.
- Return the skillet to medium-low heat and add Marsala wine and chicken broth. Stir and bring the mixture to a boil. Let it simmer for about 3 minutes to reduce slightly.
- Remove the skillet from the heat again and whisk in the butter and crushed rosemary until the butter melts and the sauce is smooth.
- Pour the sauce over the steaks and serve immediately.
