Pan-Fried Steak with Marsala Sauce Recipe

Beef Chuck Steaks with Marsala Sauce

Ingredients:

  • 4 (8-ounce) beef chuck steaks, well trimmed
  • Salt and pepper to taste
  • 2 cloves garlic, crushed
  • cup Marsala wine
  • cup chicken broth
  • 3 tablespoons butter
  • teaspoon dried rosemary, crushed

Directions:

  1. Heat a large, heavy skillet over high heat for about 2 minutes, or until it becomes very hot.
  2. Season both sides of the steaks with salt and pepper according to your taste.
  3. Place the steaks in the hot skillet and immediately reduce the heat to medium-high. Cook the steaks for 4 minutes on the first side.
  4. Flip the steaks over and cook for an additional 4 to 6 minutes, depending on how you prefer your steaks done. Once cooked, transfer the steaks to a platter and cover them with aluminum foil to keep warm.
  5. Remove the skillet from the heat. Quickly saut the crushed garlic in the residual heat for 1 to 2 minutes until fragrant.
  6. Return the skillet to medium-low heat and add Marsala wine and chicken broth. Stir and bring the mixture to a boil. Let it simmer for about 3 minutes to reduce slightly.
  7. Remove the skillet from the heat again and whisk in the butter and crushed rosemary until the butter melts and the sauce is smooth.
  8. Pour the sauce over the steaks and serve immediately.
