Chicken and Potato Casserole Recipe

Ingredients

  • 1 tablespoon olive oil
  • 4 potatoes, peeled and cubed (or more to taste)
  • 1 (15.25 ounce) can whole kernel corn, drained
  • 1 (10.5 ounce) can condensed cream of chicken soup
  • 1 cups canned chicken, drained
  • cup milk
  • cup sour cream
  • 2 tablespoons salted butter, melted
  • 1 cup shredded Cheddar cheese

Directions

  1. Preheat the oven to 350F (175C). Grease the bottom of a large baking dish with olive oil.
  2. Place the cubed potatoes into a large pot and cover them with salted water. Bring the water to a boil. Reduce the heat to medium-low and let the potatoes simmer until they are halfway cooked, about 10 minutes. Drain the potatoes and transfer them to the prepared baking dish.
  3. In a large mixing bowl, combine the drained corn, condensed cream of chicken soup, canned chicken, milk, sour cream, and melted butter. Stir well to combine all ingredients.
  4. Pour the mixture over the partially cooked potatoes, spreading it evenly across the baking dish.
  5. Cover the baking dish with aluminum foil and bake in the preheated oven for 20 minutes.
  6. After 20 minutes, remove the dish from the oven, discard the aluminum foil, and sprinkle shredded Cheddar cheese over the top.
  7. Return the dish to the oven and bake for an additional 10 minutes, or until the cheese is melted and bubbly.

Cook's Note

If you prefer, you can cook and shred your own chicken instead of using canned chicken.

To be honest, I take full responsibility for this. Being a mother of 3 boys, I always follow recipes to the letter. However, this particular one was missing some essential seasonings.
