Jan's Blueberry and Flax Burgers (Paleo) Recipe

Ingredients

  • 1 pint fresh blueberries
  • 3 pounds extra lean ground beef
  • cup flax seed meal
  • 2 teaspoons sea salt (or to taste)
  • 2 teaspoons ground black pepper (or to taste)

Directions

  1. Place the blueberries in a food processor and pulse until finely chopped, but not pureed.
  2. In a mixing bowl, combine the chopped blueberries, ground beef, flax seed meal, sea salt, and black pepper. Mix everything thoroughly.
  3. Form the mixture into 12 burger patties.
  4. Place the patties in the freezer and let them firm up for about 10 minutes.
  5. Preheat your outdoor grill to medium-high heat. Lightly oil the grill grate.
  6. Grill the patties for 3 to 5 minutes on each side, or until the burgers are no longer pink in the center, and the juices run clear. You can check the temperature with an instant-read thermometer; it should read at least 165F (74C).

Cook's Notes

  • This recipe works well with 90% or 95% lean ground beef.
  • If you prefer, you can use kosher salt instead of sea salt.
  • Because the meat is lean, the burgers will cook quickly and there won't be flare-ups.
