Jan's Blueberry and Flax Burgers (Paleo) Recipe

Ingredients
- 1 pint fresh blueberries
- 3 pounds extra lean ground beef
- cup flax seed meal
- 2 teaspoons sea salt (or to taste)
- 2 teaspoons ground black pepper (or to taste)
Directions
- Place the blueberries in a food processor and pulse until finely chopped, but not pureed.
- In a mixing bowl, combine the chopped blueberries, ground beef, flax seed meal, sea salt, and black pepper. Mix everything thoroughly.
- Form the mixture into 12 burger patties.
- Place the patties in the freezer and let them firm up for about 10 minutes.
- Preheat your outdoor grill to medium-high heat. Lightly oil the grill grate.
- Grill the patties for 3 to 5 minutes on each side, or until the burgers are no longer pink in the center, and the juices run clear. You can check the temperature with an instant-read thermometer; it should read at least 165F (74C).
Cook's Notes
- This recipe works well with 90% or 95% lean ground beef.
- If you prefer, you can use kosher salt instead of sea salt.
- Because the meat is lean, the burgers will cook quickly and there won't be flare-ups.
