Sicilian Olive Chicken

This flavorful dish combines tender chicken cutlets with a delicious tomato, spinach, and olive mixture for a light yet satisfying meal. Perfect for a quick weeknight dinner!

Ingredients

  • 1 (14 ounce) can petite diced tomatoes with garlic and olive oil or other Italian-style seasonings
  • 1 cups frozen chopped spinach, thawed
  • cup halved Sicilian or other green olives
  • 1 tablespoon capers, rinsed
  • teaspoon crushed red pepper, or to taste
  • 4 (4 ounce) chicken cutlets
  • 1 tablespoon freshly ground pepper
  • 1 tablespoon extra-virgin olive oil

Directions

Step 1: In a bowl, combine the diced tomatoes, thawed spinach, olives, capers, and crushed red pepper. Set aside.

Step 2: Sprinkle freshly ground pepper on both sides of the chicken cutlets.

Step 3: Heat the olive oil in a large skillet over medium-high heat.

Step 4: Add the chicken cutlets to the skillet and cook for 2 to 4 minutes on one side until browned.

Step 5: Flip the chicken cutlets over and top them with the prepared tomato-spinach-olive mixture.

Step 6: Reduce the heat to medium, cover the skillet, and cook for an additional 3 to 5 minutes until the chicken is fully cooked through.

Recipe Tips & Notes

Tip: If you can't find chicken cutlets, you can easily make your own. Purchase four 5-ounce chicken breasts, remove the tenders, and trim the fat. Place the chicken between two pieces of plastic wrap and pound it with a rolling pin, meat mallet, or heavy skillet until its about inch thick.

I added garlic, and I chopped the green olives and used whole kalamata olives. I also added some chopped fresh basil. I seasoned my chicken with pepper, garlic salt, and smoked paprika. And once the sauce was simmering I added a dash of balsamic vinegar. And finished with fresh Parmesan. My husbands reaction "this isn't just good... It's literally one of the best things I've ever had. I would be ok with with for breakfast, lunch, and dinner... For the rest of my life." He's kind of a foodie so I guess this was a hit. It was so easy. I guess this will be added to out week night menus.

This is a very easy recipe and it was tasty. My chicken pieces were too thick and so I had to cook it longer, but that was easy to do. I used no salt added Italian style tomatoes so some people added a little salt but the flavors were good. Everyone said they liked it.

I have made this more than once. Not many recipes calling for olives but it is a nice addition

Delicious flavor! I used fresh spinach and sauteed it prior to adding to the mix because I didn't have frozen. I also added some red onions while cooking the chicken. Really easy and yummy.

I was looking for a fast chicken dinner. I didn't have tomatoes, so I substituted about a 1/4 cup salsa. I didn't have capers either, so I deglazed the pan with green olive juice to get the briny taste. Also cooked 1/2 onion before adding the chicken. I will make again. served over garlic pasta.

8/4/20 - FANTASTIC! Delicious! Easy to prep - I used green and Kalamata olives - flavor and color were beautiful and felt healthy with lots of veggies. Perfect for a summer dinner on the deck, also great as leftovers the next day. Excellent!
