Easy Chicken Alfredo Recipe

Chicken Alfredo with Fettuccine

This creamy Chicken Alfredo with fettuccine is the perfect comfort meal. A savory blend of tender chicken, mixed vegetables, and Alfredo sauce served over perfectly cooked noodles makes for a hearty and satisfying dish.

Ingredients

  • 1 pound uncooked fettuccine or linguine
  • 2 boneless chicken breast halves, cooked and cubed
  • 1 (16 ounce) jar Alfredo-style pasta sauce
  • 1 (10 ounce) package frozen mixed vegetables
  • 1 (4.5 ounce) can sliced mushrooms
  • cup milk

Directions

  1. Fill a large pot with lightly salted water and bring it to a rolling boil. Once boiling, add the fettuccine and cook until tender but still firm to the bite, about 8 minutes. Drain well and set aside.
  2. While the pasta is cooking, place the cubed cooked chicken, Alfredo sauce, frozen mixed vegetables, mushrooms, and milk in a large saucepan over medium-low heat.
  3. Cook and stir the mixture until the chicken is heated through and the vegetables are tender, about 5-7 minutes.
  4. Serve the warm Alfredo and chicken sauce over the cooked fettuccine noodles. Enjoy immediately!

This wasextremely easy and really good with just a few changes. I use two cans of chicken breast, a can of sliced mushrooms, and two jars of light alfredo sauce. I put a little olive oil in the pan, add some garlic, fry it a little, add the chicken and mushrooms, spice it up with salt, pepper, basil leaves, and some Emeril's Italian Essence, and heat it through. Then I add the sauce and simmer. I use angel hair pasta,only half a pound, and after I add the pasta to the boiling water I blanch a cup or two of fresh broccoli for just a minute and add it to the pan with the sauce. That's it! My family loves it and it only takes about 15 or 20 minutes. Very tasty!

I sautéed the mushrooms in white wine and onions first before adding the other ingredients.

I will make this again, it was very good. Only thing I would change for next time is to use a bit more sauce. My pasta wasn't dry at all though, i just personally would like to add more. I also added shredded Parmesan cheese and mixed it throughout, then I added graded Parmesan cheese to the pasta (I did not mix the graded cheese). Then i put the pasta in the oven (on 400 degrees) for about 7 minutes just allowing the cheese to melt. I think the extra cheese added more flavor to the pasta.

I made this even more simple by using precooked roasted chicken. I thought the 15 oz jar of Alfredo wouldn’t be enough but it was perfect. Didn’t change anything else. So quick and easy and delicious!

I must admit I was prepared to not like this due to the addition of vegetables. Whoever heard of putting mixed vegetables in Alfredo sauce?! But I forged ahead. I cut the recipe in half since I was serving only my husband and myself, and I used rotisserie chicken breast I had in the freezer. Oddly enough, my only complaint is that I ended up using more of the jarred Alfredo sauce and milk because the sauce was a little dry. Surprisingly, the vegetables weren’t off-putting at all. I can see this being a great way to get veggies in those picky kiddos, plus it’s really fast and quick to fix.

I cubed two raw skinless boneless chicken breast halves and cooked them in a wok. Just two of us so I only boiled 5 ounces pasta and only 5 ounces frozen vegetables When chicken was cooked I added the rest of the ingredients and simmered for about 15 minutes until the vegetables were tender crisp. Both of us like it, it's a keeper. Next time I might use cooked rotini and mix it in the wok with the rest of the ingredients.

I used broccoli and fresh mushrooms! I also added shredded mozzarella cheese! Turned out awesome!

Even better the next day. I had to use regular spaghetti and I am not a fan of mushrooms, so I left that out. I also used only canned peas-no mixed veggies and I used two 16 oz jars of garlic alfredo sauce because I like a lotta sauce! I'm gonna be making this again-it's really delish!

I made this and it was delicious but I used fresh baby bella mushrooms and some fresh broccoli. Easy, healthy and quick... Also you can use cooked shrimp.

I found the recipe has too much pasta. I will use at least 1/4 lb less pasta next time. Also needs some spices for flavor, I used black pepper and parsley but will probably try red pepper flakes next time.
