Salmon Fillets with Parmesan Crust

Ingredients

  • cup bread crumbs
  • cup salted butter, melted
  • 2 tablespoons grated Parmesan cheese
  • 1 medium lemon
  • 3 (4 ounce) salmon fillets
  • 1 teaspoon olive oil

Directions

  1. Preheat your oven's broiler and set the rack about 6 inches from the heat source.
  2. In a bowl, combine the bread crumbs, melted butter, and Parmesan cheese. Stir until the mixture is well blended.
  3. Cut the lemon in half. Squeeze the juice of one half into the butter mixture. Set aside the other half, and slice it into 3 pieces.
  4. Place each salmon fillet on a piece of aluminum foil, folding up the edges to create a little tray.
  5. Brush the salmon fillets with olive oil. Pour the butter mixture evenly over each fillet, ensuring its well coated. Place one lemon slice on top of each fillet.
  6. Broil the salmon on the top rack in your preheated oven for 15 to 20 minutes, or until the fish flakes easily with a fork.
