Lemon-Butter Salmon

Salmon Fillets with Parmesan Crust
Ingredients
- cup bread crumbs
- cup salted butter, melted
- 2 tablespoons grated Parmesan cheese
- 1 medium lemon
- 3 (4 ounce) salmon fillets
- 1 teaspoon olive oil
Directions
- Preheat your oven's broiler and set the rack about 6 inches from the heat source.
- In a bowl, combine the bread crumbs, melted butter, and Parmesan cheese. Stir until the mixture is well blended.
- Cut the lemon in half. Squeeze the juice of one half into the butter mixture. Set aside the other half, and slice it into 3 pieces.
- Place each salmon fillet on a piece of aluminum foil, folding up the edges to create a little tray.
- Brush the salmon fillets with olive oil. Pour the butter mixture evenly over each fillet, ensuring its well coated. Place one lemon slice on top of each fillet.
- Broil the salmon on the top rack in your preheated oven for 15 to 20 minutes, or until the fish flakes easily with a fork.
