Keto Cheeseburger Casserole
Ingredients
This recipe was developed at its original yield. Ingredient amounts are automatically adjusted, but cooking times and steps remain unchanged. Note that not all recipes scale perfectly. Original recipe (1X) yields 4 servings.
- 1 teaspoon butter, or as needed
- 1 pound ground beef
- cup diced onion
- 2 cloves garlic, pressed
- Salt and freshly ground black pepper, to taste
- 1 cup shredded sharp Cheddar cheese, divided
- 2 tablespoons ketchup
- 2 tablespoons mayonnaise
- 2 tablespoons diced dill pickles
- tablespoon mustard
Directions
Step 1: Preheat your oven to 400F (200C) and grease a baking dish with butter.
Step 2: In a large, nonstick skillet, cook ground beef and diced onion over medium heat. Stir occasionally and cook until the beef is browned and the onions become soft and translucent, about 5 to 10 minutes.
Step 3: Add the pressed garlic to the skillet and cook for another minute, or until fragrant. Season the mixture with salt and freshly ground black pepper to taste.
Step 4: Stir in cup of shredded Cheddar cheese until its fully melted and combined with the beef mixture. Remove the skillet from heat.
Step 5: Add the ketchup, mayonnaise, diced dill pickles, and mustard to the skillet. Mix everything together until well combined.
Step 6: Transfer the beef mixture into the prepared baking dish and top with the remaining cup of shredded Cheddar cheese.
Step 7: Bake in the preheated oven for 7 to 10 minutes, or until the cheese is melted and bubbly.

Okay, I’m not one for recipes. I DO NOT follow them. With that being said, I’m not going to lie, I didn’t follow this one, I just followed the idea. Though, still low carb, I added stuff. I first sautéed onions and red bell peppers. Added minced garlic after and then browned my beef. Added a little Worcestershire, some onion powder and didn’t skimp on the salt and pepper. Once it’s brown I turned the fire off. I then in a separate bowl mixed ketchup, Mayo, mustard, minced onion, pickle juice and paprika and then mixed that into my meat. I then added about 10-15 chopped pickle slices and about 1/2 cup of cheese and mixed that. Put it all in a casserole and topped with crispy bacon and more cheese and put in the oven. I served over a bed of lettuce and tomatoes…. Thanks for the idea, but ^ that recipe needed a little help, and I did just that!

Quick and easy! I used Carb-friendly tortillas in a cupcake pan. Turned out cute little sliders.

Substituted 1 small can of mushrooms and Swiss cheese slices to cover in the baking dish (delete pickles if doing this) for Mushroom Swissburger version.

Only thing I did differently was to add some Worcestershire sauce. This was excellent. We will make it again.

It was really good. I just didn't know what % of hamburger to use. Maybe there is a standard but I don't know it. I used 80%.

I followed this recipe exactly and we all just loved it! So delicious, quick and easy to make and very versatile. It will also be a great base recipe that can easily be modified to suit everyone's tastes, just like making an actual hamburger. I see bbq and spicy cheeses in our future. Made this as written with one exception, I did not butter my pyrex (sprayed with nonstick instead). Thought it came out very good, will keep this for the future.
