Broiled Cauliflower with Four Cheese Tomato Sauce

- 2 tablespoons corn oil
- cup finely chopped onion
- 3 large cloves garlic, minced
- 4 cups large cauliflower florets
- Salt and pepper to taste
- 1 (24 ounce) jar Classico Four Cheese Sauce
- cup dry white wine
- 2 tablespoons chopped fresh parsley, divided
- 1 tablespoon finely grated Parmesan cheese
- 1 cup freshly grated mozzarella cheese
Directions
Step 1: Heat oil in a large pan over medium-high heat. Add onion and saut until it starts to soften but doesnt brown, about 2 to 3 minutes.
Step 2: Stir in the minced garlic and cook for another minute, allowing the flavors to meld.
Step 3: Add the cauliflower florets to the pan, then season with salt and pepper to taste. Cook and stir for another minute to combine the ingredients.
Step 4: Pour in the Classico Four Cheese Sauce and dry white wine, then add 1 tablespoon of fresh parsley. Stir everything together and let it simmer on low heat for 5 minutes.
Step 5: Reduce the heat to medium-low, cover the pan, and continue cooking until the cauliflower is almost tender, about 10 more minutes. Stir occasionally to prevent sticking.
Step 6: Preheat the broiler to high. Line a rimmed baking sheet with foil and lightly coat it with cooking spray.
Step 7: Transfer the cauliflower mixture to the prepared baking sheet, spreading it out evenly. Gently scoop some of the sauce back over the top of the cauliflower for extra flavor.
Step 8: Sprinkle the grated Parmesan cheese and mozzarella cheese evenly over the cauliflower.
Step 9: Place the baking sheet under the broiler for about 2 minutes, or until the cheese is bubbly and lightly browned in spots. Keep an eye on it to ensure the cheese doesnt burn.
Step 10: Remove from the oven and let it rest for 3 minutes before transferring to a serving platter. Garnish with the remaining fresh parsley.
