Buffalo Chicken Strips
Ingredients
This recipe was developed at its original yield. Ingredient amounts are automatically adjusted, but cooking times and steps remain unchanged. Note that not all recipes scale perfectly.
- 1 (1.6 oz) package Buffalo wing seasoning mix (such as McCormick)
- 2 (16 ounce) packages boneless, skinless chicken tenders
- cup reduced-fat mayonnaise
- 1 cup panko bread crumbs
- cup buttery spread (such as Smart Balance)
- cup blue cheese salad dressing, or to taste
Directions
Step 1: Preheat the oven to 375F (190C). Line a baking sheet with foil.
Step 2: Place the seasoning mix in a plastic bag. Add the chicken tenders to the bag and shake well to coat each piece evenly.
Step 3: Take 1 to 2 pieces of chicken at a time, dip them in mayonnaise to lightly coat, then roll them in the panko bread crumbs to cover thoroughly.
Step 4: Arrange the coated chicken tenders on the prepared baking sheet. Dot each chicken strip with 2 to 3 pats of buttery spread.
Step 5: Bake in the preheated oven for about 15 minutes, or until the chicken is no longer pink in the center and the juices run clear.
Step 6: Serve the chicken tenders with the blue cheese dressing on the side for dipping.
Cook's Note
You can substitute regular mayonnaise for reduced-fat mayonnaise, use butter or margarine in place of Smart Balance, and opt for ranch or creamy Italian dressing instead of blue cheese, if desired.
