Sweet Sausage Marsala Recipe

This simple yet delicious pasta dish combines the richness of mild Italian sausage with the sweetness of bell peppers and the depth of Marsala wine, all served over tender farfalle pasta. Perfect for a cozy weeknight dinner!

Ingredients

  • 1 (16 ounce) package farfalle (bow tie) pasta
  • 1 pound mild Italian sausage links
  • cup water
  • 1 clove garlic, minced
  • large onion, sliced
  • 1 medium green bell pepper, sliced
  • 1 medium red bell pepper, sliced
  • 1 tablespoon Marsala wine
  • 1 (14.5 ounce) can Italian-style diced tomatoes, undrained
  • 1 pinch dried oregano
  • 1 pinch black pepper

Directions

  1. Bring a large pot of lightly salted water to a boil. Add the farfalle pasta and cook for 8 to 10 minutes, or until al dente. Drain the pasta and set aside.
  2. While the pasta is cooking, place the whole sausages and cup of water into a skillet over medium-high heat. Cover and cook for 5 to 8 minutes, allowing the sausages to cook through. Once done, drain the sausages and thinly slice them.
  3. Return the sliced sausages to the skillet. Add the minced garlic, sliced onions, and bell peppers, followed by the Marsala wine. Stir everything together and cook over medium-high heat, stirring frequently, until the sausage is fully cooked and the vegetables have softened.
  4. Stir in the undrained diced tomatoes, black pepper, and dried oregano. Continue cooking for about 2 more minutes, allowing the flavors to meld together. Remove from heat.
  5. Serve the sausage and vegetable mixture over the cooked farfalle pasta, and enjoy!

This dish was a huge success with my family. After reading some other reviews, I decided to enhance the flavor by increasing the amount of Marsala wine, adding frozen peppers and onions, and including 2 cans of chopped tomatoes. I will definitely be making this again, but next time I'll kick up the spice level a bit.

Great meal! I made a few modifications and will make some more adjustments next time, and there will definitely be a next time. I underestimated the amount of bow tie pasta needed for the servings, which was a mistake. Two tablespoons of Marsala wine wasn't sufficient, and using sweet Italian sausage instead of mild was also an error, although it still turned out tasty. I followed the recipe with a touch of extra salt due to the tomatoes, and it turned out to be easy and delicious. Next time, I plan to precook the sausage to simplify the cooking process and reduce the number of pans used. Once the sausage and veggies were done, I added the pasta to the same pan for serving. This dish turned out absolutely amazing. I found that I needed to add extra water while the sausage was cooking. I also decided to throw in some more marsala wine and a splash of olive oil because the skillet seemed too dry. The end result was incredibly flavorful!
