Herb Baked Catfish Recipe

Ingredients

  • 4 (6 ounce) catfish fillets
  • 2 tablespoons dried parsley
  • teaspoon paprika
  • teaspoon dried thyme
  • teaspoon dried oregano
  • teaspoon dried basil
  • teaspoon ground black pepper
  • 2 tablespoons lemon juice
  • 1 tablespoon melted butter
  • teaspoon garlic powder

Directions

  1. Preheat your oven to 350F (175C).
  2. Place the catfish fillets in a 9x13-inch baking dish.
  3. In a small bowl, combine the dried parsley, paprika, thyme, oregano, basil, and black pepper. Sprinkle this herb mixture evenly over the fish fillets.
  4. In another bowl, mix together the lemon juice, melted butter, and garlic powder. Drizzle the butter mixture over the fillets, ensuring they are evenly coated.
  5. Place the baking dish in the preheated oven and bake for about 20 minutes, or until the fish is cooked through and flakes easily with a fork.

I utilized freshly harvested spices from my garden along with fresh garlic to prepare this dish. I combined all the spices and microwaved them to melt the butter and soften the garlic. I also added sliced fresh lemons and jalapenos at the bottom of the pan greased with olive oil before placing the catfish on top. The outcome was a dish bursting with wonderful flavors.

I thoroughly enjoyed this dish. Instead of the listed ingredients, I opted for The Spice Hunter- Seafood Seasoning, which added a fantastic flavor. I also used a small amount of butter with a hint of lemon juice. The fillets turned out perfectly cooked after 20 minutes in the oven. I served this with corn grits mixed with yellow bell pepper as a side dish. I will definitely be making this dish again.

I will definitely be making this recipe again. The only alteration I made was using garlic salt instead of garlic powder, and I lightly drizzled the fish with olive oil before baking because the herb mix seemed a bit dry. The dish had a fantastic flavor, and I'm excited to try it with Tilapia next time!

I didn't enjoy this dish at all. My husband thought it was okay, but I had a hard time eating it. There were too many spices, and I even used more fish than the recipe called for. The paprika didn't taste right in it. I'm not sure if we'll finish the leftovers.
