One-Pan Creamy Chicken and Bacon Zucchini Noodles Recipe
Recipe
Ingredients
- 1 teaspoon Italian herb seasoning
- 1 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- 1 1/2 pounds chicken breast tenders
- 6 slices bacon
- 2 tablespoons minced fresh garlic
- 1/2 teaspoon red pepper flakes
- 4 cups peeled, chopped fresh tomatoes, drained
- 1 1/2 cups heavy cream
- 1 cup shredded Parmesan cheese, divided
- 3 cups baby spinach leaves
- 4 cups cooked and drained zucchini noodles
- Salt and freshly ground black pepper to taste
Directions
Step 1: In a large bowl, whisk together the Italian herb seasoning, paprika, salt, and black pepper. Pat the chicken dry with paper towels and toss it in the seasoning mixture, ensuring each piece is well-coated.
Step 2: In a 12-inch skillet, fry the bacon over medium heat until crispy and browned, which should take about 5 minutes. Once done, pour off all but 2 tablespoons of bacon fat and set the bacon aside after chopping it into small pieces.
Step 3: In the same skillet, fry the chicken in the remaining bacon fat over medium heat for about 3 minutes on each side until browned. Once done, remove the chicken from the skillet and set it aside, keeping it warm.
Step 4: Add the minced garlic and red pepper flakes to the skillet. Stir and cook for about 30 seconds until fragrant. Then, stir in the chopped tomatoes and cook for 3 minutes to soften them.
Step 5: Pour in the heavy cream and bring the mixture to a boil. Stir in cup of shredded Parmesan cheese and cook for about 3 minutes until the cheese melts and the sauce becomes smooth.
Step 6: Add the spinach leaves and cook, stirring, for 1-2 minutes until the spinach wilts.
Step 7: Return the chicken and any accumulated juices back into the skillet. Stir in the chopped bacon and zucchini noodles. Cook for 3 to 4 minutes, stirring occasionally, until the chicken is heated through. Season with salt and black pepper to taste.
Step 8: Serve the dish by sprinkling the remaining Parmesan cheese on top.
Tips
For the best results, use freshly grated Parmesan cheese instead of pre-shredded. Pre-shredded cheese often contains anti-caking agents that can cause the sauce to break.

I didn't quite get it right this time. :( I was missing some ingredients and had to make substitutions. But despite that, it turned out delicious! You can tell that Brenda Venable, the recipe creator, really put a lot of thought and effort into it. I always print out the recipes I try and make notes on them for next time. This time, all I needed to note down was to follow the recipe properly. The dish tastes fantastic and is very satisfying.

The sauce and chicken were absolutely delicious! I paired it with pasta instead of zucchini this time, but I'm excited to try it with zucchini next time.

I absolutely adored the outcome! It was incredibly tasty. Even my picky 10-year-old tried it and enjoyed it. I may have stretched the truth a bit by likening it to spinach dip with chicken 🤣
