Sausage and Vegetable Sheet Pan Dinner Recipe
Roasted Sausages with Veggies
Ingredients:
- 1 head broccoli, cut into florets
- 10 ounces baby potatoes, halved
- 1 large carrot, cut into 1/4" slices
- red onion, roughly chopped
- 3 tablespoons olive oil
- 2 tablespoons whole grain mustard
- 2 tablespoons grated Pecorino Romano cheese
- 1 teaspoon dried thyme
- teaspoon dried oregano
- Salt and ground black pepper to taste
- 4 mild Italian sausage links
Directions:
- Preheat the oven to 400F (200C).
- In a large bowl, combine the broccoli florets, halved baby potatoes, carrot slices, and roughly chopped red onion.
- Pour in the olive oil and add the whole grain mustard, grated Pecorino Romano cheese, dried thyme, dried oregano, salt, and black pepper. Toss everything well to ensure the vegetables are coated evenly.
- Spread the vegetables in an even layer on a sheet pan. Leave space in the center for the sausages.
- Place the sausages on the pan, pushing the vegetables aside so the sausages are in direct contact with the pan.
- Roast in the preheated oven, flipping both the sausages and vegetables halfway through. Continue baking for 30 to 35 minutes, or until the sausages are no longer pink inside. To be sure, use an instant-read thermometer the sausages should reach 160F (70C) in the center.
Cooks Note: If youre using larger potatoes (not baby potatoes or fingerlings), youll need to cut them into smaller pieces (1-inch cubes) so they cook properly in time. Feel free to swap out the Pecorino Romano for Parmesan cheese, or use any type of sausage you prefer for this dish.

The whole family liked this. It's tasty, and it has meat along with several vegetables, making it a wholesome meal. It's very easy and quick to make, so this is going to be on the short list of meals to fix on those days when a home-cooked meal is wanted in a hurry.

So easy and SO tasty. I used cubed sweet potatoes, broccoli, carrot and green beans as the veg. Cut the sausages into thirds. Gave everything a sprinkle of EVOO, S & P, freshly grated Parmesan & garlic powder. As everything was cut to the same size, it cooked in 20" (@425)

The flavors and ease of this recipe are 5 stars. The baking time is off for the potatoes. If you keep the cooking times the same you need to dice the potatoes otherwise you will have undercooked ones. I had to pull my sheet out at the 30 minute mark because I didn’t want my broccoli completely burnt. We had undercooked potatoes and they were quartered. Cut the potatoes small and you will be fine. Made ours with Turkey kielbasa-delicious.

Great starter recipe. I took a short cut and bought a clamshell of stir-fry veggies. I added a jalapeno, chopped garlic, stoned ground mustard and olive oil. After seasoning with salt and tossing, I placed the veggies on a parchment-lined baking sheet. Placed chicken-spinach-gouda sausages on top, and sprinkled a generous amount of parmesan cheese over all and roasted at 400* for approximately 25 min. or until veggies were tender and sausages were crispy browned. Simple and easy...we loved it.

Very disappointing. The potatoes and carrots were not fully cooked despite being cut into bite-size pieces. This should be done in stages, hard vegetables for about 15 minutes, then add the meat and more delicate vegetables.

I love making this recipe the only thing I changed is I use the green giant Klondike gourmet potatoes, they are small but I still halve or quarter them depending on size but they are a more tender potatoes and less dense so they cook faster.

Solid and easy meal choice! I didn't really taste the mustard, so I may add more next time. Also depending on the size of your baby potatoes, they may need further cutting. We quartered ours because we felt they were a little big, and they still did NOT bake well enough. They probably should have been sliced thin. With some amendments, will make again!

Delicious recipe that is foolproof! I’ve made this quick and easy recipe several times & my entire family loves it every time I make it. The only thing I did different was that I used seven links of sausage because we have some sausage lovers i our family and the four that the recipe called for just didn’t cut it!

I didn't add broccoli florets because I wasn't sure how to time it based on the other reviews. I did add some whole, fresh mushrooms, and they were quite yummy. Thanks!

This was a simple recipe everyone enjoyed. The combined flavors are delicious. We’ve made it several times. Lately I’veI used Parmesan Romano cheese because it’s much cheaper.

I made this as written. My baby potatoes were a little less than 1 1/2” before I halved them and they came out tender. I rate this as 4.5 stars for goodness and 5.5 stars for simplicity.

Loved it. Didnt have any mustard grain just used a squirt of yellow mustard. Also, since my wife is not a fan of italian sausage I used some Polish sausage also and it turned out delicious
