Protein-Packed Vegetarian Fried Rice Recipe

Cook Time: 10 minutes

Ingredients:

  • 1 tablespoon olive oil
  • (12 ounce) package firm tofu, cubed
  • 2 carrots, peeled and diced
  • 2 stalks celery, diced
  • onion, minced
  • 2 cloves garlic, minced
  • Salt and ground black pepper, to taste
  • 3 cups cooked white rice
  • 4 large eggs, beaten
  • 1 (8 ounce) package frozen chopped spinach, thawed
  • 1 teaspoon Sriracha hot sauce, or to taste

Directions:

  1. Heat the olive oil in a large skillet over medium-high heat.
  2. Add the cubed tofu, diced carrots, celery, minced onion, and garlic to the skillet.
  3. Cook and stir for 5-10 minutes, or until the vegetables are just soft. Season with salt and pepper to taste.
  4. Stir in the cooked rice, beaten eggs, and thawed spinach into the tofu mixture. Continue cooking for about 5 minutes, or until the eggs are fully cooked and no longer runny.
  5. Finally, stir in the Sriracha sauce, and season with additional salt and pepper if desired.

Delicious meal... I just used fresh spinach instead of frozen. I found that I needed plenty of salt and pepper, as well as extra Sriracha to suit my taste. I'm enjoying the leftovers for lunch today. I suggest using the whole package of tofu as there wasn't much. I cooked the tofu separately at first to give it some color and prevent it from breaking apart.

Lacked flavor.

This dish lacked flavor for me. I found it necessary to add a generous amount of Sriracha to enhance the taste. Incorporating additional spices, especially from the curry family, would greatly improve the overall flavor profile.
