Protein-Packed Vegetarian Fried Rice Recipe
Ingredients:
- 1 tablespoon olive oil
- (12 ounce) package firm tofu, cubed
- 2 carrots, peeled and diced
- 2 stalks celery, diced
- onion, minced
- 2 cloves garlic, minced
- Salt and ground black pepper, to taste
- 3 cups cooked white rice
- 4 large eggs, beaten
- 1 (8 ounce) package frozen chopped spinach, thawed
- 1 teaspoon Sriracha hot sauce, or to taste
Directions:
- Heat the olive oil in a large skillet over medium-high heat.
- Add the cubed tofu, diced carrots, celery, minced onion, and garlic to the skillet.
- Cook and stir for 5-10 minutes, or until the vegetables are just soft. Season with salt and pepper to taste.
- Stir in the cooked rice, beaten eggs, and thawed spinach into the tofu mixture. Continue cooking for about 5 minutes, or until the eggs are fully cooked and no longer runny.
- Finally, stir in the Sriracha sauce, and season with additional salt and pepper if desired.

Delicious meal... I just used fresh spinach instead of frozen. I found that I needed plenty of salt and pepper, as well as extra Sriracha to suit my taste. I'm enjoying the leftovers for lunch today. I suggest using the whole package of tofu as there wasn't much. I cooked the tofu separately at first to give it some color and prevent it from breaking apart.

Lacked flavor.

This dish lacked flavor for me. I found it necessary to add a generous amount of Sriracha to enhance the taste. Incorporating additional spices, especially from the curry family, would greatly improve the overall flavor profile.
