Rock's T-Bone Steaks Recipe

This recipe yields 4 servings. The seasoning blend creates a flavorful crust on the steaks, while the grilling gives them a perfect, smoky finish.

Ingredients:

  • 4 teaspoons salt (or to taste)
  • 2 teaspoons paprika
  • 1 teaspoons ground black pepper
  • teaspoon onion powder
  • teaspoon garlic powder (or to taste)
  • teaspoon cayenne pepper (or to taste)
  • teaspoon ground coriander (or to taste)
  • teaspoon ground turmeric (or to taste)
  • 4 (16 ounce) T-bone steaks, at room temperature

Directions:

  1. Gather all ingredients and set them aside.
  2. Preheat your outdoor grill on high heat. Lightly oil the grate to prevent the steaks from sticking.
  3. In a small bowl, combine the salt, paprika, black pepper, onion powder, garlic powder, cayenne pepper, coriander, and turmeric.
  4. Rub the seasoning mixture evenly over the steaks, making sure to coat all sides.
  5. Place the steaks on the preheated grill. Grill for about 3 to 3 minutes per side for medium-rare. The internal temperature should reach 130F (54C) when checked with an instant-read thermometer inserted into the center of each steak.
  6. Once the steaks are cooked to your desired doneness, remove them from the grill and let them rest for a few minutes before serving.

We have used this steak rub three times so far, and tonight's try was the most successful. In our first attempts, I used the full amount of salt, but tonight I reduced both the salt and turmeric by half. Remember to apply the rub right before grilling. If you leave it on for too long, the flavor becomes overwhelming, and the meat loses its juiciness. Thank you, Rocky, for the best steak we've had all year!

After reading through multiple reviews, I discovered a helpful feature allowing me to adjust the number of servings in the recipe, which made calculations much easier. I opted for two servings. Despite not having Turmeric on hand, the dish turned out delicious. As I am not a fan of spicy food, I only used a hint of cayenne. Following Emeril's advice from his T-bone Steaks recipe, I drizzled 1 tablespoon of Olive oil on each side of the steaks before seasoning them, a brilliant suggestion. I reduced the amount of pepper as per recommendations and added an extra dash of Emeril's original spice blend before grilling. For a well-sized steak, ensure your grill is piping hot and time each side for 3.5 minutes. Overall, the steak turned out fantastic, and I will definitely be making this recipe again!

Easy to mix and enhances the flavor of all your steaks, but be cautious with thinner cuts as a little goes a long way. Definitely recommended for T-bone steaks, just follow the recipe for best results.

It took slightly longer than 3-3 1/2 minutes per side to achieve a perfectly cooked medium steak. I grilled mine for 5-5 1/2 minutes, reaching an internal temperature of 150°F.
