Ingredients
- 8 ounces enoki mushrooms
- 1 teaspoon sesame oil
- 1 large clove garlic, finely chopped
- 1 teaspoon low-sodium soy sauce (such as Bragg)
- teaspoon finely grated fresh ginger
Directions
- Cut the bottom 2 inches off the enoki mushrooms and discard. Gently separate the mushroom strands.
- Heat the sesame oil in a medium-sized nonstick skillet over medium heat.
- Add the chopped garlic and cook for about 1 minute, until fragrant.
- Add the enoki mushrooms to the skillet and cook, stirring occasionally, until the mushrooms begin to wilt, about 2 minutes.
- Stir in the soy sauce and grated ginger, tossing to coat the mushrooms evenly.
- Cook for an additional 1-2 minutes, allowing the flavors to meld together. Serve immediately.
