Grilled Pineapple Chicken

Ingredients
- 1 cups pineapple juice
- cup soy sauce
- 1 teaspoon ground ginger
- teaspoon garlic powder
- teaspoon white pepper
- 4 (6-ounce) skinless, boneless chicken breast halves
Directions
- In a large bowl, mix together the pineapple juice, soy sauce, ground ginger, garlic powder, and white pepper. Reserve a small amount of the marinade separately for dipping later.
- Place the chicken breasts into the marinade, ensuring they are fully submerged. Add enough water to cover the chicken if needed. Cover the bowl and refrigerate for 24 hours to allow the flavors to infuse.
- When ready to grill, preheat your outdoor grill to medium-high heat. Lightly brush the grill grate with oil to prevent sticking.
- Grill the chicken for 5 to 7 minutes per side, depending on the thickness of the chicken. The chicken is done when the inside is no longer pink and the juices run clear.

Super easy to make!! We decided to double the marinade and included red onion, red bell pepper, orange bell pepper, and fresh pineapple with the chicken. Surprisingly, we didn't have to add any extra water to the marinade to ensure that all the ingredients were coated. The result was fantastic kabobs!

This experience was amazing! The marinade had a delightful aroma as I blended it together. I marinated and cooked additional chicken, and stored the leftovers for the next night to use in a stir fry. Surprisingly, the dish turned out to be even better than what you would get at most restaurants! I made sure to use freshly minced garlic, which added a delicious touch to the dish.

Wow, what a delicious dish! The only change I made was pouring the sauce over the chicken as it baked, and the result was excellent! We served the chicken on top of rice and drizzled some of the flavorful sauce over it. I highly recommend this recipe - it's super easy to make and incredibly tasty!
