I have made this a handful of times and it's always been a big hit. I do make a few adjustments though; first I pre-cook the bacon until it's about half done, I don't like mushy sprouts and that's what you get in order for the bacon to crisp up. Next I pour the bacon, any grease from the pre-cooking, the syrup, sprouts and s&p in a bowl and mix it all up, then I add just enough olive oil to coat usually only a couple of tablespoons is needed. I definitely line my baking sheet with foil because the syrup really gets sticky and I cook at 400 for only about 20 minutes. These small adjustments make it perfect every single time.

Scaled this down to a single serving for myself and baked in my little 5 inch cast iron dish. I mean, I basically turned it into something completely different, but it was insanely delish. First, I shaved the brussel sprouts - this prevents that mushy center when brussel sprouts are cooked for too long, but allowing enough time for the bacon to crisp up. I also loved the texture of the edge pieces that get nice and caramelized from the maple syrup. Second, with about 10 mins left to cook I added goat cheese crumbles on top. Third, once out of the over, I also added toasted almond slivers. I would eat this every single day.

A big hit with our family's holiday meal! We also cooked the bacon ahead of time, added 1/2 cup of chopped red onion - could have added more as we had doubled the recipe. After stirring part way through the roasting, we tossed in 1/2 cup or so of dried cranberries. With the 2# of Brussell Sprouts, it took closer to 30 - 35 minutes until fully roasted.

Truly exceptional and super easy! I have tried various types of bacon and we all agree, applewood or hickory smoked THICK cut bacon adds that extra dimension of flavor. 6 slices cut up, par browned in the oven then add the additional ingredients. Baked 38 minutes to achieve the doneness we like. PLEASE consider adding some chopped pecans when you mix everything together and then bake. We also have added craisins, just to make it more festive, and they were remarkable! Thank you for this GREAT recipe! We love it throughout the year, but are especially fond of these during the colder months.

Loved it. I used the adjustments that one commenter mentioned....I par-cooked the bacon and mixed it along with some olive oil into the brussel sprouts in a bowl. I also chopped and half cooked (sauted) 3 shallots and mixed them into the bowl as well, then baked that whole delicious mess in the oven for about 30 mins. the sweetness of the maple syrup and onions along with the bacon and sprouts was just fantastic. Everyone I make these for loves them, including non veggie eaters. I cut the ends then quarter cut the larger brussels and halve the smaller ones. in a mixing bowl I use a little himalayan salt, Weber's garlic jalepeno salt mix, garlic powder, pepper, pure maple syrup and pure olive oil (not evoo). Mix the brussels really well then spread them out in a cast iron skillet (or baking pan) already heated in the 400 degree oven while prepping the brussels. Cut bacon in bite size chunks and coat the top of the brussels. roast for 20 minutes then mix once. roast another 15-20 until bacon is cooked and brussels get crispy edges.

This was a very easy recipe that produced a really great dish! I watched the video and put the bacon in the oven as the oven heated up. So, I skipped the olive oil, too. There wasn't 1 sprout left!

My family and I love this recipe, but I've altered it a slight amount: 1. After trimming the brussels sprouts, I blanch them for 3-4 minutes. They are more tender that way. 2. After baking for 20 min. at 400F, I keep the sprouts on the middle rack, and turn the broiler on high until they (and the bacon) are crispy (for the most part).

Made this for Easter today. I made a few changes. I didn't put the bacon in the oven. I cut it up in cubes and pan fried it till crispy. After the brussel sprouts came out of the oven I put them, the bacon and dried cranberries into another frying pan (not with the bacon grease) and heated it through on low heat. These were a huge hit and the first to go. Everyone wants me to double or triple the recipe next time.

I made these for family dinner and was asked to bring for Thanksgiving. Even my grandson, who has never eaten Brussels sprouts, loved them. I did leave part of the bacon grease in the mix and used a light olive oil to toss. I partially cooked the bacon and then cut the fatty parts to bake with the sprouts. Tossed the crispy pieces in right before serving. A real hit with my family.

Love, love, love this recipe!! I usually double or triple the recipe when I make it. I do line the pan with foil or parchment paper and brush it some bacon grease for extra flavor!!! Also, having lived in Vermont for over 30 years, I have learned that "life is too short for fake maple syrup"! Be sure to use pure maple syrup

Delicious and easy to do as a side for a baked fish recipe that also uses bacon. We did have to bake it a little longer, and used our convection bake setting for five minutes to give the sprouts some extra browning.

I have made this recipe many times. I do add precooked bacon ( so that it has a crunch ) and I also make a few changes to the original recipe add chopped red onions and cranberries for that extra sweet taste. At the very end of the baking I also add feta cheese. ( quantities are based on what you like!). Delicious!!

20-25 minutes cook time and monitor last 5 minutes as needed. I think in an electric oven it would be fine at 25-30 but in a gas stove it definitely did not need the last 5 minutes
