Chicken and Dumplings Soup
Ingredients
- 4 pounds boneless, skinless chicken meat
- 2 small carrots, sliced
- 3 sweet potatoes, peeled and cubed
- 3 Irish potatoes, cubed
- 5 small onions
- 5 cups water
- Salt to taste
- Ground black pepper to taste
- 1 bay leaf
- 3 stalks celery tops
- 1 pinch cayenne pepper
- 2 cups all-purpose flour
- teaspoon salt
- 1 teaspoon baking powder
- 4 tablespoons rendered chicken fat
Directions
- Place the chicken in a large pot. Season with salt, pepper, a pinch of cayenne, a bay leaf, and a handful of celery tops. Cover with water and cook until the chicken is fully cooked.
- Once the chicken is cooked, remove and discard the bay leaf. Add the sliced carrots, cubed sweet potatoes, Irish potatoes, and onions. Continue cooking until the vegetables are almost tender.
- While the soup is simmering, prepare the dumplings. In a bowl, combine the flour, teaspoon salt, baking powder, and chicken fat. Gradually add enough water to form a stiff dough.
- Divide the dough into three equal portions. Roll each portion out and cut into squares.
- Begin adding the dumplings to the soup. First, add one-third of the dumplings to the simmering soup and cook for 5 minutes.
- Add another third of the dumplings and cook for an additional 5 minutes.
- Finally, add the remaining dumplings and cook for another 5 minutes, ensuring all dumplings are cooked through.
- Serve hot and enjoy!
