Chicken Pot Pie with Crescent Rolls Recipe

Chicken Pot Pie with Crescent Rolls Recipe

Cook Time: 50 minutes

Ingredients:

  • 2 (8 ounce) packages refrigerated crescent rolls, divided
  • 2 tablespoons butter
  • 1 pound cooked, cubed chicken breast meat
  • 1 pound chopped, cooked rotisserie chicken
  • 1 (16 ounce) package frozen mixed vegetables
  • 1 (15 ounce) can sliced potatoes, drained
  • 1 (10.5 ounce) can condensed cream of chicken soup
  • 1 (10.5 ounce) can condensed cream of mushroom soup
  • cup milk
  • Salt and ground black pepper to taste

Directions:

  1. Preheat your oven to 350F (175C).
  2. Grease a 9x13-inch baking dish and line the bottom with one can of crescent roll dough, making sure to pinch the seams together.
  3. In a medium saucepan, melt butter over medium heat. Add cubed chicken breast, rotisserie chicken, frozen vegetables, and sliced potatoes. Cook while stirring frequently for 5-7 minutes, until the vegetables are thawed and the mixture is heated through.
  4. In a separate saucepan, warm both cans of condensed soups over medium-low heat. Gradually pour in the milk, stirring constantly, and cook for about 3 minutes until well combined and heated through.
  5. Pour the soup mixture into the chicken and vegetable mixture, stirring until fully combined. Season with salt and pepper to taste.
  6. Transfer the combined mixture into the prepared baking dish. Top with the second can of crescent roll dough. Do not pinch the seams of the dough on top.
  7. Cover the dish lightly with aluminum foil to prevent the crescent rolls from browning too quickly.
  8. Bake in the preheated oven for 40-50 minutes, or until the casserole is heated through and the rolls are golden brown.

It turned out great. My husband doesn’t even like chicken pot pie but loved this. I boiled & shredded chicken breasts & almost doubled the recipe. I also boiled & sliced eggs & added after I mixed all ingredients. I used the buttery flaky crescent rolls & they turned out perfect. I left the foil on only taking it off the last 5 minutes of baking to evenly brown my top crust. The bottom crust browned perfectly during cooking. I’ll definitely make again.

I cut the recipe in half in a square pan. The only changes I made were to bake the bottom crust until light brown first, and cover with foil for the last 10 minutes. Yum!

Easy and delicious! I was a little confused about the two different chickens listed in the ingredients, but I just ended up using more meat from the rotisserie chicken and it turned out great. I also removed the foil for the last 5 minutes of cooking to allow the top to brown evenly.

Soooo yummy! Used two boiled chicken breasts and 1.5 12 oz.bags of frozen mixed veggies. The only things I added were thyme, onion powder, and celery salt for depth of flavor. I also used Campbell’s Healthy Choice soup. The buttery flaky crescent rolls were scrumptious in this recipe!

Used chicken breast tenders, parboiled in chicken broth, then cut up. I used canned vegetables, peas ,carrots and diced potatoes (he doesn’t like corn). Easy and the crescent rolls give crust a great flavor.

Delicious! I added crisp bacon pieces and mushrooms to mine, although you can use whatever extras you have to "doctor it up."
