BBQ Pulled Chicken Recipe
Ingredients:
- 3 pounds bone-in chicken breast halves, with skin
- Salt and ground black pepper, to taste
- 2 tablespoons avocado oil
- cup barbeque sauce, or to taste
Directions:
Step 1: Preheat the oven to 350F (175C).
Step 2: Pat the chicken breasts dry with a paper towel. Season both sides generously with salt and pepper.
Step 3: Heat avocado oil in a 12-inch, nonstick, oven-safe skillet over medium heat. Once the oil is hot, add the chicken breasts, skin-side down. Cook for 2 to 3 minutes until lightly browned.
Step 4: Turn the chicken over and brown the other side for another 2 to 3 minutes.
Step 5: Cover the skillet and transfer it to the preheated oven. Bake for 25 to 30 minutes, or until an instant-read thermometer inserted near the bone reads 160F (71C).
Step 6: Remove the skillet from the oven. Transfer the chicken to a cutting board and cover with foil. Let it rest for about 10 minutes until it's cool enough to handle. The residual heat will bring the internal temperature to 165F (74C).
Step 7: Once the chicken has rested, discard the skin and bones. Shred the chicken using two forks.
Step 8: Serve the shredded chicken warm with your favorite barbecue sauce.
