Cheesy Chicken, Broccoli, and Rice Casserole Recipe

Chicken and Broccoli Casserole

Yields: 6 servings

Ingredients:

  • 1 cups water
  • 1 cups uncooked instant rice
  • 2 large cooked chicken breasts, cut into 1-inch cubes
  • 1 head broccoli, cut into florets
  • 2 (10.5 ounce) cans condensed cream of broccoli soup
  • 1 cup milk
  • 1 tablespoon Italian-seasoned bread crumbs
  • 1 teaspoon garlic powder
  • 1 teaspoon ground black pepper
  • 1 (8 ounce) package shredded Cheddar cheese

Directions:

  1. Preheat the oven to 350F (175C).
  2. Bring 1 cups of water to a boil in a saucepan. Add the rice, stir, then cover and remove from heat. Let it sit for about 5 minutes until the water is absorbed. Fluff the rice with a fork.
  3. Transfer the rice to a casserole dish, and mix it with the cooked chicken and broccoli florets.
  4. In a separate mixing bowl, combine the condensed soup, milk, bread crumbs, garlic powder, and black pepper. Stir until well combined.
  5. Pour the soup mixture over the rice, chicken, and broccoli in the casserole dish. Add of the shredded Cheddar cheese and mix everything together.
  6. Sprinkle the remaining Cheddar cheese over the top of the casserole.
  7. Bake, uncovered, in the preheated oven for about 30 minutes, or until the casserole is heated through and bubbly.
