Carne Asada Tacos Recipe

Ingredients
- 1 pounds boneless beef top sirloin, cut into thin bite-size slices
- teaspoon salt
- 1 teaspoon freshly ground black pepper
- Crushed red pepper to taste
- 1 lime
- 1 (28 ounce) can tomatillos
- 2 fresh jalapeno peppers, seeded
- 4 tablespoons canola oil, divided
- 1 (10.5 ounce) can beef broth
- 12 (6 inch) corn tortillas
- large onion, chopped
- 2 tomatoes, chopped
- 1 avocado, peeled, pitted, and sliced
- 1 bunch fresh cilantro, chopped
- 1 lemon
Directions
Step 1: Start by placing the sliced beef into a shallow bowl. Season it with salt, black pepper, and crushed red pepper to taste. Squeeze the juice of the lime over the meat, making sure its evenly coated. Cover the bowl and refrigerate for 30 minutes to allow the flavors to meld.
Step 2: While the meat is marinating, prepare the tomatillo sauce. In a blender or food processor, combine the tomatillos and jalapenos. Puree the mixture for about 15 to 20 seconds until smooth and thick.
Step 3: Heat 1 tablespoon of oil in a large skillet over medium-high heat. Carefully pour in the tomatillo mixture and cook, stirring frequently, for about 5 minutes until it thickens slightly.
Step 4: Add the beef broth to the skillet and stir. Reduce the heat to low and let the mixture simmer for 20 to 30 minutes, stirring occasionally. The sauce should become thick enough to coat the back of a spoon. Once done, transfer it to a serving dish and set aside.
Step 5: In the same skillet, heat another tablespoon of oil over high heat. Add 1/3 of the marinated beef and saut it for about 1 minute, until browned. Transfer the cooked beef to the serving dish. Repeat with the remaining beef in two batches.
Step 6: While the beef is cooking, warm the tortillas in the oven or microwave according to the package instructions.
Step 7: To assemble the tacos, place two tortillas on top of each other. Add a portion of the cooked beef to the center, then spoon some of the tomatillo mixture over the meat. Top with chopped onion, tomatoes, avocado slices, and fresh cilantro. Finish by garnishing with a wedge of lemon for a burst of fresh citrus right before eating.

I planted several tomatillo plants this year, and when I found myself with an abundance of them, I was a bit unsure of what to do with them all. However, after trying out this recipe and using my fresh tomatillos instead of canned ones, I was pleasantly surprised by how delicious it turned out to be! My husband even raved about how good it was. I made a few small tweaks, like adding garlic to the tomatillos and jalapeno, and opting for flour tortillas over corn ones (not a fan of corn tortillas). I used No Name Steaks, which I always have on hand for quick meals. The dish turned out to be incredibly flavorful and had a lot of character. I omitted the red pepper for my husband, but the dish was so wonderful in terms of flavor, color, and texture that we didn't even miss it. In my opinion, this recipe is perfect in every way. Awesome recipe, but skip the tomatillo sauce - it's not that great. I recommend using La Victoria salsa verde instead, it's a fantastic alternative.

It was delicious! My family added shredded cheddar to ours, but whether with or without, they were perfect!
