Grilled Chicken with Rosemary and Bacon Recipe
Ingredients

- 4 teaspoons garlic powder
- 4 skinless, boneless chicken breast halves
- Salt and pepper to taste
- 4 sprigs fresh rosemary
- 4 thick slices bacon
Directions
Step 1: Preheat your outdoor grill to medium-high heat and lightly brush the grate with oil to prevent sticking.
Step 2: Evenly sprinkle 1 teaspoon of garlic powder over each chicken breast, then season with salt and pepper according to taste.
Step 3: Place a fresh rosemary sprig on top of each chicken breast for aromatic flavor.
Step 4: Wrap each chicken breast with a thick slice of bacon to hold the rosemary in place. Secure with a toothpick or an additional thick rosemary stem if needed.
Step 5: Grill the chicken breasts for approximately 8 minutes per side, or until the internal temperature reaches 165F (74C) and the juices run clear. Stay nearby to manage any flare-ups caused by the bacon.
Step 6: Remove the toothpicks before serving and enjoy your flavorful, juicy chicken.

These were absolutely delicious! I believe this dish would be perfect for a fancy dinner. I opted for boneless, skinless chicken thighs and baked them in the oven. Placing a cast iron skillet in the oven ensured that the meat sizzled beautifully. They needed about 25 minutes to cook through, and I finished off by popping them under the broiler for a couple of minutes to crisp up the bacon. So tasty!

I decided to try this recipe because I love the taste of rosemary. I had some Costco bacon in the freezer, so I took it out at 4:00 pm for a 6:30 pm dinner. The bacon defrosted easily, and I decided to use fresh garlic instead of dried. I chopped it up, added a pinch of kosher salt, and turned it into a garlic paste. I spread this on the chicken as instructed. I used a blowtorch to crisp up the bacon even more, as I prefer it extra crispy. The result was fantastic. This recipe is definitely a keeper.

I always drizzle lemon juice over my bacon-wrapped chicken and sprinkle it with rosemary. I like to coat the chicken pieces with olive oil after seasoning them. The smaller the bacon-wrapped chicken bites, the better according to my family! I have been making this dish for years and I wondered if others knew about this recipe. It's a family favorite.

I absolutely adored this recipe and found it incredibly straightforward to prepare. I did find that it required 3-4 pieces of bacon to wrap around each chicken breast, but hey, the more bacon the better, right? I also decided to use two sprigs of rosemary per breast, placing one on top and one underneath. Instead of firing up the grill, I opted for a trusty cast iron skillet and it worked like a charm.

This dish was amazing! Tenderizing the chicken made wrapping it with bacon a breeze. I substituted dried rosemary for fresh sprigs and filled the chicken with colby jack cheese. It received a lot of compliments from my guests.
