Directions

I used this recipe as a starting point. I swapped pounded/seasoned tenders and thighs out for the breasts; pre-cooked bacon for the ham; peppered colby-jack for the swiss; rolled in egg and parmesan/ coconut flour to keep it keto friendly; and instead of mustard inside, I made a honey, spicy mustard, mayo, sour cream dressing to put over it after air-frying. Served with a salad with the same dressing. It was tender, juicy, flavorful, and slightly crispy outside. It was a huge hit!

This was delicious. I used gluten free panko. Its unclear how the rolling is supposed to work - I put the two halves back together after the cheese and ham and then rolled the breast. This is quite difficult as there's just too much there to roll. I don't see how rolling the open butterflied chicken breasts would work. Still, its delicious. I used Jarlsberg cheese.

I cook these in the air fryer a bit longer than the recipe calls for, but they are delicious. The only alteration I made is using gluten-free breadcrumbs, but made no difference in the flavor or consistency from using regular breadcrumbs.

Oh my goodness!! This was AMAZING!!! My kids even said it was the BEST thing I had ever made! I used GF flour and bread crumbs. Apparently my picture doesn’t meet the qualifications and there is no more for me to take a new picture! HA HA!

This turned out great. I eat gluten free and dairy free because of allergies, so I used gluten free flour and rice-based Panko. I substituted dairy free provolone for the cheese. A definite keeper.

My entire family loved this, even my 3 year old. I served it to both of my kids with pasta sauce, huge hit. I crushed ritz crackers and used that as the coating instead of panko crumbs. I also used Maui Onion Mustard from Eastern Provisions rather than plain Dijon. Can't wait to make this again!
