Ingredients

  • 1 (14.5 ounce) can of stewed tomatoes
  • 4 (4 ounce) tilapia fillets

Directions

  1. Heat the stewed tomatoes in a large skillet over medium heat until they start to simmer.
  2. Once the tomatoes are simmering, add the tilapia fillets to the skillet.
  3. Spoon the tomatoes over the tilapia to coat them evenly, and then cover the skillet with a lid.
  4. Let the fish simmer for about 10 minutes, or until the fish flakes easily when tested with a fork.

Excellent pairing, although I made some additions. I included garlic, basil, oregano, salt, and pepper. It was my first time trying Tilapia with tomatoes, and the flavors complemented each other perfectly!

Rewritten review: I didn't have Tilapia, so I used haddock fillets instead. I cooked them with fire-roasted tomatoes, fresh garlic, and dried Italian seasoning. Served over rice. Quick and affordable to make. However, the dish turned out a bit bland even with my modifications. It was alright, but I'm still unsure if I would try making it again.
