Ingredients
- 1 (14.5 ounce) can of stewed tomatoes
- 4 (4 ounce) tilapia fillets
Directions
- Heat the stewed tomatoes in a large skillet over medium heat until they start to simmer.
- Once the tomatoes are simmering, add the tilapia fillets to the skillet.
- Spoon the tomatoes over the tilapia to coat them evenly, and then cover the skillet with a lid.
- Let the fish simmer for about 10 minutes, or until the fish flakes easily when tested with a fork.

Excellent pairing, although I made some additions. I included garlic, basil, oregano, salt, and pepper. It was my first time trying Tilapia with tomatoes, and the flavors complemented each other perfectly!

Rewritten review: I didn't have Tilapia, so I used haddock fillets instead. I cooked them with fire-roasted tomatoes, fresh garlic, and dried Italian seasoning. Served over rice. Quick and affordable to make. However, the dish turned out a bit bland even with my modifications. It was alright, but I'm still unsure if I would try making it again.
