- 1 (16 ounce) package gnocchi
- 2 teaspoons olive oil
- 1 medium shallot, minced
- 3 cloves garlic, minced
- 8 ounces ground sirloin
- teaspoon salt
- teaspoon dried red pepper flakes
- 2 ounces tomato paste
- cup vodka
- cup heavy whipping cream
- cup freshly grated Parmesan cheese
- 2 tablespoons freshly grated Parmesan cheese
- Fresh basil leaves, chiffonade
Directions
- Bring a large pot of water to a boil. Add the gnocchi and cook until they float to the surface, about 5 to 6 minutes. Drain and reserve cup of the cooking water.
- While the gnocchi cooks, heat olive oil in a large skillet over medium-low heat. Add the minced shallot and garlic, gently cooking until the shallot softens and the garlic becomes fragrant, about 3 to 5 minutes.
- Increase the heat to medium and add the ground sirloin along with salt and red pepper flakes. Stir and cook until the meat begins to brown.
- Mix in the tomato paste and allow it to caramelize slightly, enhancing its rich flavor.
- Pour in the vodka to deglaze the pan, scraping the browned bits with a wooden spoon. Bring the sauce to a boil, then reduce to a simmer for 5 minutes.
- Stir in the heavy cream, mixing until the tomato paste is fully incorporated. Let the sauce gently simmer until it starts to thicken, approximately 5 to 10 minutes.
- Add cup plus 2 tablespoons of Parmesan cheese, stirring until fully melted and the sauce is creamy.
- Fold the drained gnocchi into the sauce along with the reserved cup of cooking water. Mix gently to coat the gnocchi evenly.
- Serve hot, garnished with fresh chiffonade basil leaves for a fragrant finish.
