Ingredients
- 1 tablespoons olive oil
- cup coarsely chopped onion
- 1 clove garlic, smashed and chopped
- cup freekeh (also known as frikeh, fireek, or farik)
- 1 medium carrot, peeled and roughly chopped
- 3 tablespoons celery leaves, chopped
- teaspoon dried parsley
- teaspoon salt
- teaspoon ground black pepper
- 1 large bay leaf
- 3 cups chicken stock (dry-prepared EFC)
Directions
Follow these simple steps to create your delicious freekeh soup:
- Heat the olive oil in a saucepan over medium heat.
- Add the chopped onion and cook until slightly softened, about 3 minutes.
- Stir in the garlic and cook for about 30 seconds until fragrant.
- Add the freekeh and toast it in the pan for about 3 minutes, stirring occasionally.
- Incorporate the chopped carrot, celery leaves, dried parsley, salt, pepper, and bay leaf into the saucepan.
- Pour in the chicken stock and bring the mixture to a boil.
- Once it boils, reduce the heat to a simmer and cook for 15 to 20 minutes, or until the freekeh is tender.
- Taste the soup and adjust the seasoning if needed.
- Let the soup rest for 5 minutes to allow the flavors to meld.
- Remove the bay leaf, then serve and enjoy!
