  • cup coarsely chopped onion
  • 1 clove garlic, smashed and chopped
  • cup freekeh (also known as frikeh, fireek, or farik)
  • 1 medium carrot, peeled and roughly chopped
  • 3 tablespoons celery leaves, chopped
  • teaspoon dried parsley
  • teaspoon salt
  • teaspoon ground black pepper
  • 1 large bay leaf
  • 3 cups chicken stock (dry-prepared EFC)

Directions

Follow these simple steps to create your delicious freekeh soup:

  1. Heat the olive oil in a saucepan over medium heat.
  2. Add the chopped onion and cook until slightly softened, about 3 minutes.
  3. Stir in the garlic and cook for about 30 seconds until fragrant.
  4. Add the freekeh and toast it in the pan for about 3 minutes, stirring occasionally.
  5. Incorporate the chopped carrot, celery leaves, dried parsley, salt, pepper, and bay leaf into the saucepan.
  6. Pour in the chicken stock and bring the mixture to a boil.
