Chili Dog Mac and Cheese Recipe
I can't really explain why I decided to create this chili dog mac and cheese hybrid. I always get a few requests for comforting casseroles this time of year, but if the goal was to end up with a recipe that tasted like both things, I failed miserably. On the other hand, if a tasty, comforting casserole was the mission, then lets celebrateand invite a few friends, since this thing is huge. While I did enjoy eating this, I was a bit confused why it didnt really taste like chili dogs or mac and cheese. I knew the lack of creamy sauce might be an issue, but I thought if I stirred in enough cheese, all would be fine. Taste and texture-wise, I was correct, but the flavors just didnt come together as Id hoped. Anyway, I tried, and failed, but also kind of succeeded, and if youd like something that feels and tastes like an American goulash with hot dogs, then I really do hope you give this a try soon. Ingredients
This recipe was developed at its original yield. Ingredient amounts are automatically adjusted, but cooking times and steps remain unchanged. Note that not all recipes scale perfectly.
- 1 tablespoon olive oil
- 1 pound ground beef
- 1 large onion, diced
- 2 generous teaspoons kosher salt, plus more to taste
- 3 tablespoons chili powder
- 2 teaspoons ground cumin
- 1 teaspoon smoked paprika
- 1/2 teaspoon freshly ground black pepper
- 1/8 teaspoon ground cinnamon
- 1/8 teaspoon cayenne pepper, or to taste
- 1/2 teaspoon dried oregano, preferably Mexican oregano
- 4 cloves garlic, minced
- 1 cup diced green peppers
- 1 pound hot dogs, sliced
- 1 (28 ounce) can crushed tomatoes
- 2 cups water
- 2 rounded cups elbow macaroni
- 8 ounces shredded white Cheddar cheese
- 8 ounces shredded Monterey Jack cheese
- Green onions, sliced, for the top (optional)
Directions
Step 1: Add olive oil to a large pot and place over high heat. Add the ground beef and cook, stirring and breaking it up with a spoon or spatula for about 2 minutes.
Step 2: Add diced onions and kosher salt to the pot, cooking and stirring until the beef becomes crumbly and the onions turn translucent, about 5 minutes.
Step 3: Stir in chili powder, cumin, paprika, black pepper, cinnamon, cayenne pepper, dried oregano, and minced garlic. Cook for another 2 minutes, stirring frequently.
Step 4: Add the diced green peppers, sliced hot dogs, crushed tomatoes, and water to the pot. Stir everything together and bring to a simmer. Once simmering, reduce the heat to medium-low and let it cook, stirring occasionally for at least 30 minutes. Taste and adjust seasoning if needed.
Step 5: While the chili is simmering, fill a large pot with lightly salted water and bring it to a rolling boil. Add the macaroni and cook according to the package instructions, but reduce the cooking time by 1 minute, until the pasta is firm to the bite (about 8 to 11 minutes).
Step 6: Preheat the oven to 400F (200C). Once the chili has cooked, turn off the heat and drain the macaroni. Add the macaroni to the chili and stir until well combined.
Step 7: Transfer the chili and macaroni mixture into a large, deep 9x13-inch baking dish. In a separate bowl, mix the shredded Cheddar and Monterey Jack cheeses together. Sprinkle about 60% of the cheese on top of the chili mixture and stir it into the casserole thoroughly.
Step 8: Sprinkle the remaining cheese evenly over the top of the casserole and lightly press it into the surface with the tip of a spoon.
Step 9: Bake in the preheated oven for 30 to 35 minutes, or until the casserole is bubbly and golden brown on top. Let it rest for 15 minutes before serving.
Step 10: If desired, top with sliced green onions for garnish.
Chef's Note
You can substitute the can of crushed tomatoes with 3 cups of tomato sauce for a slightly different flavor.

I usually prefer to follow a new recipe exactly as written the first time I make it. However, that's not always possible. When I went to the store to buy ingredients, I couldn't find any good poblanos, so I decided to substitute 1 jalapeno pepper and enough red bell pepper to make up the 1 cup needed. Additionally, all varieties of hotdogs were only available in 12 oz packages instead of 16 oz, so I made up the difference by adding 4 oz more ground beef. Despite these changes, we absolutely loved the dish!! The combination of spices, pasta, meats, and cheeses was fantastic. We are big fans of this recipe!! Thank you, Chef John!

I followed the recipe closely, but I decided to roast the pepper to remove the skin, which resulted in a milder flavor for the dish. Additionally, I opted for Mozzarella and String Cheese instead, as these are easily available in Mexico and have an amazing taste!

Delicious! This chili was a fantastic choice for a pre-Trick or Treat dinner. I prepared it in two disposable pans for convenient serving and cleanup. Both the children and adults loved it. The spices were well-balanced, providing plenty of flavor without being overpowering. It was easy to make and perfect for preparing in advance and baking later. I had dinner for 6 guests, so I halved the recipe. Surprisingly, it wasn't sufficient as two teenage boys absolutely devoured it. This weekend, I plan to prepare it again using just a Dutch Oven and charcoal, the old-fashioned way.

I watched the video with my 10-year-old and we both thought it would be a fun meal to make together. And we were right! Her only request was no onions and no green peppers - typical kid preferences. This recipe is almost identical to my own chili mac, with just a few minor tweaks to the seasonings. I skip the cinnamon and oregano, and adjust the amounts of other spices slightly. Personally, I initially thought this recipe would be just okay, but the children I prepared it for absolutely loved it! It yields a large quantity and is packed with flavor. The only adjustment I made was using a red bell pepper instead of green. Although I typically enjoy Chef John's recipes and found this one to be a fun and unique experience, I don't think I would make it again unless I'm feeding a high school football team or a large group of kids. I tried a new recipe that was quite unique for my family - we're not used to having cut up wieners in our meals. Surprisingly, it turned out to be delicious and the wieners added a nice touch! While my family wasn't as excited about it as I was, everyone still enjoyed it and even took leftovers for lunch.
