Pan-Roasted Ribeye with Caramelized Onions and White Truffle Butter Recipe

Ingredients

  • cup vegetable oil, divided
  • 3 large white onions, sliced -inch thick
  • cup butter, room temperature
  • 1 small shallot, minced
  • 1 teaspoon white truffle oil
  • 2 (14 ounce) Black Angus ribeye steaks
  • Kosher salt and freshly ground black pepper to taste

Directions

  1. Preheat your oven to 350F (175C).
  2. In a saucepan, heat 2 tablespoons of oil over medium-high heat. Add the sliced onions and cook, stirring occasionally, until the onions become dark and soft. This should take about 25 minutes.
  3. While the onions are cooking, prepare the truffle butter by mixing the butter, minced shallot, and truffle oil in a bowl until well combined. Place it in the refrigerator to set for about 10 minutes.
  4. Next, heat an oven-safe skillet over medium-high heat. Pour in the remaining 2 tablespoons of oil. Season the ribeye steaks with salt and pepper on both sides.
  5. Once the skillet is hot, place the steaks in the pan. Sear them for about 2 minutes on each side until they are browned.
  6. Cover the skillet with aluminum foil and transfer it to the preheated oven. Bake for 4 to 6 minutes, or until the steaks reach a reddish-pink color in the center. The internal temperature should be 130F (54C) when measured with an instant-read thermometer.
  7. Remove the skillet from the oven and let the steaks rest, covered, for about 5 minutes.
  8. Slice the steaks and place them on serving plates. Top each steak with the caramelized onions and a slice of truffle butter.

Cook's Notes:

  • The preparation of the butter and steaks can be done while the onions are cooking to save time.
  • The onions can be cooked to your desired level of doneness. If you prefer them less dark, reduce the cooking time.
  • If you like your steaks well-done, adjust the cooking time accordingly.
  • Save any leftover pan juices to make a delicious sauce to accompany the steaks.

Wonderful and indulgent recipe that's perfect for a special occasion. I mostly stuck to the instructions, but I opted to grease the pan with butter before baking. Next time, I'll either reduce the oven temperature or shorten the cooking time as the steak ended up a bit overdone. I paired it with grilled corn and a summer arugula salad featuring strawberries, feta, and honey balsamic dressing for a delightful meal. I will definitely be making this recipe again!
