This quick and flavorful Taco Ramen Soup combines the heartiness of ground beef, the richness of tomatoes, and the comfort of ramen noodles. It's a perfect weeknight meal that takes only a few steps to prepare!

Ingredients (Serves 4)

  • pound ground beef (or to taste)
  • 1 teaspoon taco seasoning mix (or to taste)
  • 3 quarts water
  • 3 (3-ounce) packages chicken-flavored ramen noodle soup
  • 1 (14.5 ounce) can Mexican-style stewed tomatoes
  • 1 cup water
  • cup sour cream
  • cup shredded Cheddar cheese

Directions

  1. In a skillet, cook and stir the ground beef over medium heat until fully browned, about 5 to 7 minutes. Season with taco seasoning and stir well. Set aside.
  2. In a 5-quart stockpot, bring 3 quarts of water to a boil. Once boiling, break the ramen noodles into bite-sized pieces and add them to the water. Cook, stirring occasionally, for 3 to 5 minutes or until the noodles are tender. Drain the noodles and set aside.
  3. In a separate bowl, pour the stewed tomatoes and break them into small pieces using your hands or a spoon.
  4. Dissolve 2 seasoning packets from the ramen noodles into 1 cup of water. Stir the seasoning mixture into the tomatoes.
  5. Pour the tomato mixture into the stockpot and place it over medium heat. Stir in the cooked ground beef and cook for another 3 to 5 minutes, stirring frequently until heated through.
  6. Add the drained noodles to the beef-tomato mixture and stir to coat the noodles well.
  7. Season the soup with the remaining ramen noodle seasoning packet to taste, adjusting for flavor as needed.
  8. Remove the stockpot from the heat and stir in the sour cream until fully incorporated into the soup.
  9. To serve, top each bowl with shredded Cheddar cheese. Enjoy!
