Cook Time: 15 minutes
This quick and flavorful Taco Ramen Soup combines the heartiness of ground beef, the richness of tomatoes, and the comfort of ramen noodles. It's a perfect weeknight meal that takes only a few steps to prepare!
Ingredients (Serves 4)
- pound ground beef (or to taste)
- 1 teaspoon taco seasoning mix (or to taste)
- 3 quarts water
- 3 (3-ounce) packages chicken-flavored ramen noodle soup
- 1 (14.5 ounce) can Mexican-style stewed tomatoes
- 1 cup water
- cup sour cream
- cup shredded Cheddar cheese
Directions
- In a skillet, cook and stir the ground beef over medium heat until fully browned, about 5 to 7 minutes. Season with taco seasoning and stir well. Set aside.
- In a 5-quart stockpot, bring 3 quarts of water to a boil. Once boiling, break the ramen noodles into bite-sized pieces and add them to the water. Cook, stirring occasionally, for 3 to 5 minutes or until the noodles are tender. Drain the noodles and set aside.
- In a separate bowl, pour the stewed tomatoes and break them into small pieces using your hands or a spoon.
- Dissolve 2 seasoning packets from the ramen noodles into 1 cup of water. Stir the seasoning mixture into the tomatoes.
- Pour the tomato mixture into the stockpot and place it over medium heat. Stir in the cooked ground beef and cook for another 3 to 5 minutes, stirring frequently until heated through.
- Add the drained noodles to the beef-tomato mixture and stir to coat the noodles well.
- Season the soup with the remaining ramen noodle seasoning packet to taste, adjusting for flavor as needed.
- Remove the stockpot from the heat and stir in the sour cream until fully incorporated into the soup.
- To serve, top each bowl with shredded Cheddar cheese. Enjoy!
