Meatloaf for Tomato Haters

Recipe Overview: Brighten up your dinner table with this meatloaf made without ketchup! This tomato-free dish gets its flavor from hot sauce and a package of gravy mix.

Origin and History of Meatloaf

Meatloaf has long been a staple of American home cooking, beloved for its simplicity and ability to feed a crowd. Its roots, however, extend beyond the U.S., with versions of meatloaf appearing in Europe during the Middle Ages. The earliest forms of ground meat loaves were popularized in Germany and the Scandinavian countries, often served as a way to stretch limited meat supplies. By the early 20th century, it was firmly established as an American comfort food. The "Meatloaf for Tomato Haters" recipe offers a twist by excluding the usual tomato-based condiments, catering to those who prefer a more savory, non-tomato flavor profile.

Regional Variations of Meatloaf

While meatloaf is enjoyed worldwide, its preparation varies greatly by region. In the United States, classic recipes often feature ketchup or tomato sauce as a key ingredient. In contrast, the "Meatloaf for Tomato Haters" recipe incorporates hot sauce and brown gravy, steering clear of tomatoes altogether. This variation is particularly popular in households with members who have tomato allergies or simply dislike the taste of tomatoes. Elsewhere, in countries like the UK, meatloaf may be referred to as "meat pudding" and often uses a blend of meats such as beef and lamb, with a less spicy flavor profile.

How It Differs from Similar Dishes

What sets this version of meatloaf apart from traditional recipes is its avoidance of tomatoes entirely. Most classic meatloaf recipes use ketchup or tomato paste to add moisture and flavor, often contributing a tangy sweetness. In this version, the combination of hot pepper sauce and brown gravy creates a rich and zesty flavor without the use of tomatoes. The result is a heartier, more savory meatloaf that will appeal to those who either dislike or are allergic to tomatoes.

Where is Meatloaf for Tomato Haters Typically Served?

This dish is typically served in family-oriented settings, especially in regions where meatloaf is a popular comfort food. It's ideal for a casual dinner, often accompanied by mashed potatoes, steamed vegetables, or a side salad. Given its versatile nature, "Meatloaf for Tomato Haters" is also great for meal prep or as leftovers, with the flavor improving the next day. While it's particularly popular in North America, variations can be found in homes across the world, each adapting the recipe to suit local tastes and ingredient availability.

This was tasty. I usually make Italian meatloaf so this was a nice change. I didn't have a gravy packet so I made a quick brown gravy. Also I found out that I was out of bread crumbs so just made my own and seasoned with garlic, onion, cayenne and salt.

I can’t say enough about this meatloaf... I add a bout 1/4 cup is salsa and no onions and I make a package of Knor pepper corn gravy and I don’t put the dry gravy on top I tried it the way the recipe said but the powder gravy didn’t taste good. So from then on I just cook the meatloaf and make the gravy mix as directed on package. Omg so so good

I prepared the brown gravy mix and poured on top before baking instead of sprinkling mix on top and subbed onion powder for onions. Delicious recipe. My whole family loved it.

Great meatloaf! I used a tomato and Vidalia onion dressing in place of the hot pepper sauce. I also used 1 pound ground pork and 1 pound ground beef and a pork gravy mix instead of the brown. My picky father loved it!

This recipe was a nice change from meatloaf with tomato sauce ... BUT the brown gravy mix was not so great!! After 50 minutes of cooking I checked it and it was still powder on top. I added some butter and a little water on top for the last ten minutes of cooking but it still was not good - way too thick sauce and WAY TOO SALTY!! Next time I’ll add it to the meat mixture or not at all. I made a couple of changes, no bell pepper, added sliced baby Bella mushrooms, and Merlot steak sauce in place of the hot pepper sauce. The meat loaf was very good just wish I hadn’t added the brown gravy mix on top.

Allergic to tomatoes, so this recipe was very helpful, thank you! The meatloaf was tasty and moist, but the gravy packet sprinkled on top did not work out for me. My meatloaf came out of the oven with a powder coating still sitting on the top. Very unappealing. Would it work to prepare the gravy and pour on top? Or maybe I will just add the dry packet into the meat mixture instead. Otherwise, very good - thanks!

Made some moderations (onion powder instead of diced onion, omitted bell peppers & hot sauce). Let folks add their own hot sauce to their taste.

A great meatloaf, especially for people who can't stand ketchup! The hotsauce gives it just enough zing to really make it.
