Since it was corn season, decided to try this recipe out and it turned out phenomenal. Skipped the cilantro, but added 2 tbsp of lime juice 1/2 cup of Cotija cheese, and a teaspoon of Tajin seasoning. So good!

Easy and different in a good way. Not heavy and it does taste light which is odd but a pleasant surprise. I only made half of the recipe because I didn't want to commit and now I'm looking forward to using up the rest of the ingredients since there is none left of the first batch.
