Grilled Cornish Game Hens

Ingredients:
- 1 cup lemon juice
- cup olive oil
- medium onion, chopped
- 2 cloves garlic, peeled and chopped
- 1 tablespoon white wine
- 1 tablespoon pepper
- 1 teaspoon Worcestershire sauce
- 1 teaspoon hot pepper sauce
- 1 teaspoon celery salt
- 1 teaspoon salt
- 4 (1 1/2 pound) Cornish game hens
Directions:
- In a large glass or ceramic bowl, whisk together the lemon juice, olive oil, onion, garlic, white wine, pepper, Worcestershire sauce, hot pepper sauce, celery salt, and salt until well combined.
- Add the Cornish game hens to the bowl and toss them to coat evenly in the marinade. Cover the bowl with plastic wrap and refrigerate for at least 4 hours, allowing the hens to marinate.
- Preheat your outdoor grill to medium heat and lightly oil the grate to prevent sticking.
- Remove the hens from the marinade, shaking off any excess. Reserve the remaining marinade for basting.
- Place the hens on the preheated grill and cook for about 1 hour, turning occasionally and brushing with the reserved marinade. The hens are ready when the juices run clear and there is no pink meat. To ensure they are fully cooked, use an instant-read thermometer - it should read 165F (74C) when inserted into the thickest part of the thigh, near the bone.
- Discard any unused marinade after basting the hens.
