Slow Cooker Beef Barbacoa Recipe

Cook Time: 360 minutes

Slow Cooker Shredded Beef

Ingredients:

  • 3 pounds boneless beef chuck roast
  • 1 onion, chopped
  • 3 bay leaves
  • teaspoon ground black pepper, or to taste
  • 2 tablespoons garlic powder
  • cup distilled white vinegar
  • 1 (14 ounce) can tomato sauce
  • cup chili powder
  • Salt to taste

Directions:

  1. Place the beef roast, chopped onion, bay leaves, black pepper, garlic powder, and vinegar in a slow cooker. Add enough water to completely cover the ingredients.
  2. Cover the slow cooker with its lid and set to cook on High. Let the mixture cook for about 4 hours, or until the beef is tender and easily shreds with a fork.
  3. After 4 hours, remove the beef from the slow cooker and discard the liquid. Shred the beef using a fork and knife.
  4. Return the shredded beef to the slow cooker. Add the tomato sauce, chili powder, and salt. Stir to combine.
  5. Cover the slow cooker again and cook the mixture on High for an additional 2 hours to allow the flavors to meld together.

This was everything a slow cooker recipe is supposed to be: easy, not a lot of ingredients, and great outcome. Next time, I will probably brown the meat before adding to the slow cooker just to give it another layer of flavor. Great basic recipe that could easily be customized to be more spicy or more intense, depending on your flavor buds. This also would be a great dish to serve at a party - it appeals to many different palates. Thumbs up!

This was delicious! I used chicken broth instead of water and 2 table spoons of real garlic along with 1 tablespoon of garlic powder and 2 extra bay leaves. I put everything in the crock pot at the beginning and did not disturb it for 8 hours. Served with taco, burrito, and tostadas with beans and assorted cheese and toppings

This was delicious. Changed a few things. Instead of a 1/4 cup chili powder mixed in 1 tablespoon of regular chili powder, I tbsp of chipotle chili powder and 1 tbsp. cumin. Also added a few teaspoons of liquid smoke to add authentic bbq flavor. Plus we added a can of diced green chilis. Finally we strained the broth and retained the onions and then added 2-3 tablespoons of broth back in. It. looked a little dry

Very good. I ran out of time to start this on slow cooker mode so instead I pressure cooker it instead for 40 minutes. We then followed the next steps, but reduced the amount of chili powder, added some dashes of chipotle pepper and used the slow cooker mode for 2 hours. Served with tortillas, rice, beans, Mexican blend cheese, and avocado. This made 7-8 servings for a 2 3/4 pound roast.

Made it...used a couple TBSP chipotle and ancho chili powder along with the regular chili powder...i like it spicy. It's was like spicy shredded beef. Very easy ...very tasty...very quick. I keep meaning to buy a timer for my low cooker plug. I would think next time i cook it on low for about 8 hours..timer would make it easier to go to work and not worry about it.

Really good, made some adjustments. Didn't have bayleaf, so I used a roast beef season which has bayleaf ,coriander, garlic salt, also added rotel tomatoes well drained (your choice has to how hot ) along with a teaspoon of liquid smoke or to your liking. Other than that as recipe states. Wife loves it!

THIS WAS AWESOME! I used tomato paste instead of sauce and I swapped the chile powder for 5 dried chipotle meco peppers that I had run through the food processor with the tomato paste. This tasted exactly like tacos from Chipotle Mexican Grill. I will make this again and again. Just fantastic.

I made this for Father's Day. Every loved it. I did use apple cider vinegar and chopped garlic instead. I cut the onion in thick rings and placed the meat on top of the onions. I also cooked the meat on low for 7 hrs as I had to leave the house. I probably used a tad more meat than called for too. I added a can of chopped green chilies during the last 2 hrs of cooking. I will definitely make this again.

Great recipe!!! I had to alter it to fit into a weeknight menu as most people are not home to stop the cooking process after 4 hours. So what I did was follow the direction my only change was cook my meat on low for 8 hours. After that I followed the directions and returned it back to the crock pot for 1 hour on high... I also added a good amount of garlic salt to the meat when it was cooking on high, it gave it such great flavor.. This is an amazing recipe and tastes so wonderful!!!! You will be so happy you made it!

Made as directed. This was not as spicy as I thought it would be but it was acceptable. It does indeed fall apart and makes a great topping for nachos, cilantro rice, filling for tacos, etc. The vinegar flavor is too strong. I think the recipe should be changed to either remove the vinegar or change they type to red wine / rice etc. and add a dried de-seeded Ancho pepper to steep alongside the bay leaves.

Wow! So freakin good! I did as other users and added extra garlic and cummin. I used Apple cider vinegar since I had no white and I cooked the meat in chicken broth verses water. Amazing!! I just love how easy it was too!

Didn’t chance a thing. Meat was extremely tender. Got good reviews at dinner - considering how simple it is but I was on the fence. Made for our beef burrito bowls. However- had leftovers for lunch the next day and liked more than I did the night before?! Since it was well received and how easy it was, I would make again but I have found/made Barbacoa recipes I like better. Thanks lizbot1!

Family enjoyed this for a change to traditional ground beef tacos. Used cider vinegar instead and added a little Cumin to the mix. 2nd time I made this in the InstaPot (40mins) and didn't have any tomato sauce so used red enchilada sauce minimizing the chili powder and vinegar. I was pleasantly surprised how tender it was using an InstaPot! Very nice for when I don't have time to get it into a slow cooker in the morning.

I made this recipe for dinner tonight and it was a hit. The only thing I didnt have was vinegar so I substituted it for 1/3 cup of lemon juice. I thought it was going to be spicy for my 7 and 2 year is but it wasn't. Definitely trying it again!

I made this according to the recipe. The only change I made was I scaled back the chili powder and added more garlic powder. It came out delicious and I will definitely make it again

We made this and my family loved it! We just added a little more garlic powder when we added the chili powder and tomato sauce. Very flavorful and not to spicy.

It took a couple of hours longer than recipe indicated to get all the meat tender enough to shred. Next time, I'll use a mixture of chili powders to give it a bit more flavor.
