Chicken ,Broccoli, and Cottage Cheese Casserole Recipe

Ingredients

  • 1 (16 ounce) package frozen broccoli
  • 2 (10 ounce) cans white meat chicken, drained and flaked
  • 1 (10.5 ounce) can condensed cream of chicken soup
  • 1 (8 ounce) cottage cheese
  • 1 (8 ounce) package shredded Cheddar cheese
  • cup creamy salad dressing (such as Miracle Whip)
  • 1 tablespoon lemon juice
  • 1 sleeve butter-flavored crackers, crushed
  • cup butter, melted

Directions

  1. Preheat the oven to 350F (175C).
  2. In a saucepan, combine the broccoli and cup of water over medium heat. Cover and cook for about 10 minutes or until the broccoli is tender. Drain the water.
  3. Transfer the cooked broccoli into a 9x13-inch casserole dish.
  4. To the dish, add the drained and flaked chicken, condensed cream of chicken soup, cottage cheese, shredded Cheddar cheese, creamy salad dressing, and lemon juice. Stir everything together until well combined.
  5. In a separate bowl, mix the crushed butter-flavored crackers and melted butter. Sprinkle this mixture evenly over the casserole.
  6. Place the casserole in the preheated oven and bake for 30 minutes or until the top is golden and bubbly.

This dish was amazing! My family absolutely adored it. We decided to add cauliflower and omitted the lemon juice because of allergies. Skipping the pre-cooking of the broccoli and cauliflower worked out perfectly. It was so delicious that everyone went back for seconds!

I absolutely loved this dish! I decided to use freshly cooked chicken and a variety of steamed vegetables. I'm not a fan of crackers, so I opted for French's fried onions to add that essential seasoning. This recipe is simple and would be a hit with any age group. Serving it with a fresh loaf of French bread would be the perfect finishing touch.
