Brussels Sprouts with Apple and Chicken Thighs
This dish is a flavorful combination of roasted Brussels sprouts, sweet apples, and savory chicken thighs, all seasoned with rosemary and pancetta. A simple yet delicious recipe perfect for any occasion.
Ingredients
- 2 cups Brussels sprouts, halved
- 1 red apple, cut into 1-inch cubes
- 1 (4-ounce) package pancetta
- 2 tablespoons olive oil, divided
- 1 teaspoon minced fresh rosemary
- 6 skinless, boneless chicken thighs
- Salt and ground black pepper to taste
Directions
Step 1: Preheat the oven to 425F (220C).
Step 2: In a large bowl, toss the Brussels sprouts, apple, and pancetta with 1 tablespoon of olive oil and rosemary until evenly coated.
Step 3: Spread the Brussels sprouts mixture into a single layer on a sheet pan. Make sure to leave space on the pan for the chicken thighs.
Step 4: In the same bowl, toss the chicken thighs with the remaining 1 tablespoon of olive oil. Place the chicken on the sheet pan alongside the Brussels sprouts mixture.
Step 5: Season everything with salt and pepper to taste.
Step 6: Bake in the preheated oven for 40-45 minutes, stirring the Brussels sprouts mixture every 15 minutes. The chicken should no longer be pink in the center, and the juices should run clear. An instant-read thermometer should read at least 165F (74C) when inserted into the thickest part of the chicken.
Cook's Note:
If you prefer, you can substitute rosemary with another herb of your choice to customize the flavor.

Following the advice of fellow reviewers to add the vegetables to the pan halfway through cooking, the dish turned out perfectly! I like to keep things simple, so I just coated the veggies in olive oil without any additional spices, allowing the bacon to impart flavor. I only seasoned the chicken with some spices. I will definitely be making this dish again!

Amazing quick family dinner that was absolutely delicious. My teenagers couldn't get enough of it. It was a breeze to make! I swapped pancetta for bacon and fresh rosemary for dried, but it was still fantastic!
