Beef Nacho Casserole Recipe

Cook Time: 25 minutes

Ingredients

  • 1 pound ground beef
  • 1 cups chunky salsa
  • 1 (10 ounce) can whole kernel corn, drained
  • cup creamy salad dressing (such as Miracle Whip)
  • 1 teaspoon chili powder
  • 2 cups crushed tortilla chips
  • 2 cups Colby cheese

Directions

  1. Gather all the ingredients needed for the recipe.
  2. Preheat the oven to 350F (175C).
  3. In a large skillet, cook the ground beef over medium-high heat for 5 to 7 minutes, until browned and crumbly. Remove from heat and drain any excess fat.
  4. Add the salsa, corn, salad dressing, and chili powder to the skillet. Stir everything together until well combined.
  5. Layer half of the ground beef mixture in an ungreased 2-quart casserole dish. Top with half of the crushed tortilla chips and half of the cheese.
  6. Repeat the layers with the remaining ground beef mixture, tortilla chips, and cheese.
  7. Place the casserole in the preheated oven and bake, uncovered, for about 20 minutes, or until the dish is heated through and the cheese has melted.

Recipe Tip

You can substitute Monterey Jack cheese for Colby cheese, if preferred.

I have been looking for this recipe. My mom used to make it when I was young. But she passed away, and never had any of her recipes written down. Suggestion: The recipes your family loves please write them down so if one day something happens they will be able to re-create your delicious food, and have pleasant memories when eating it.

DELICIOUS! I did make a quite a few changes though. First, I sauteed some onion in with my ground beef. I used Mexicorn, and instead of the Miracle Whip, I used just over 1/2 cup of fat free sour cream instead. I also used a packet of taco seasoning rather than the chili powder. In my pantry, there were some refried black beans I wanted to get rid of, and I figured this would be a good way to do that. Boy, was I right! I layered it on top of the beef mixture in my 9x13. For the crushed chips, I used Fritos rather than tortilla chips, and last but not least, I used 2 cups of Mexican cheeses rather than just Colby. In essence, I guess I changed almost everything about the recipe. LOL! But it was DELICOIUS! Ally

I tried this recipe but made a few alterations. First, I substituted ground beef with ground turkey. Always a healthier choice. Then I replaced chili powder with 2 tbsp. of taco seasoning. I also reduced the salsa to 1 cup & added 1 can of black beans in with the corn. Instead of 3/4 mayo I used 1/2 cup of sour cream & 1 heaping tbsp. of mayo. Once complete, this was really easy to make and so good! I totally loved it! My husband said it tasted like Nachos Grande. It's also is a good recipe if you have broken up pieces of nacho chips left at the end of a bag. I found the smaller more crumbled up pieces filled it in great. Thanks for the new recipe!

Um, HELLO!!! Of course this isn't real "Nachos"! It says CASSEROLE in the title....honestly, this is pretty good, but do sub. sour cream for the Miracle Whip.

This recipe is good as a base but it needs help. Mayo, REALLY??? So, instead of the mayo, I used Lite Sour Cream adding an extra 1/4 cup to the mix. Used Mexicorn, too. I opted for a Mexican Mixed type of shredded Cheese. Added a rinsed can of Black Beans, a small can of undrained Chopped Green Chiles, & Cilantro to the Sour Cream mix. Added onions with some minced Garlic to the meat while cooking. Used a little EVOO to fry it all up. Also used some Cilantro for garnish. Taco Seasoning worked out better I think than the plain old Chili powder, to which I added a touch of ground Cumin. When out of the oven, I sprinkled some sliced Black Olives over the bubbling cheese. I can't imagine how plain it would be without these extra ingredients and steps. It did turn out good but would be dry without the extra SC.

This was declared "a new favorite" within 3 bites by me and my partner. And as I continued to eat my bowl, I was already planning what to try next time. I'm that person who doesn't use recipes or measuring utensils and is always looking for ways to make things more delicious so of course I did a few modifications. I cooked about a half cup of chopped onion and about 1 TBS of minced garlic with my meat. I also used 2 tsp taco seasoning mixed with 1 tsp chilli powder, black beans, mayo, maybe 1/4 cup less of the salsa (the beans added some liquid) then a mix of 1 cup Mexican cheese blend and cheddar (plus a little extra...we love cheese). It was amazing! And I'm sure it would be just as amazing as it's written. I will definitely be making this meal again!

It was great. Used it with my own recipe and was great. Left out corn. Did for 12 servings. Browned the meat, onion and bell pepper. Drained grease. Combined salsa,sour cream instead of mayo,taco seasoning,can of regular diced tomatoes, can of cream of chicken, can of cream of mushroom, and cilantro with meat. Layered Doritos,meat mix,Fiesta blend mexican shredded cheese twice. Baked for 25 minutes. What's great about this recipe is how you can add to it. Mine turned out delicious!! Thanks all recipes!

I did make significant changes to this recipe, but the beauty of it is, it lends itself well to customization. I basically followed the tips @allysonhester outlined in her comment, lol. I sautéed some onion for the ground beef, added frozen diced green peppers to beef also, I used 1/2 c. sour cream instead of Miracle Whip, Taco Bell original seasoning packet (whole packet) instead of chili powder, chili cheese Fritos instead of corn chips, and Mexican cheese (shredded) instead of Colby. It turned out fantastic. I will use more sour cream next time, like 3/4 c. but it doesn't need it.

This was really good. I wasn’t sure about the Miracle Whip but it gave this a very different,nice flavour. I forgot to add the chili powder but I’m not sure it’s needed. I put it in a 7x10” pan as I thought the 9xq3” was too big. It made a nice layer with the smaller pan.

Pretty spot on for simplicity and picky eaters too!! Also easily adapted to your families preferences. My additions to the casserole were black beans, onions, garlic and yellow sweet peppers. I used a partial can of petite diced tomatoes and a bit mild sauce in place of salsa. Various cheeses on hand. For toppings to choose from I set out olives and jalepenos , avocado and thin sliced lettuce and the diced tomatoes. For sauce I made lime crema. Had blue chips on the side ....

I was given this recipe many years ago. Mine calls for a small container of plain yogurt instead of mayo. Less fat. Iv'e always topped it with chopped lettuce and tomato when out of the oven to get family their vege. Add a dollop of sour cream and yum.

I used less cheese and could have used less salsa but the flavor was spot on. I did put it in a smaller dish so it made the meat layer a little thicker. Even my picker eaters said to make this again!

Good recipe. Very easy to follow. I tweaked it a bit after the first time I made it. Just played with the seasonings and the dressing. It is definitely a crowd pleaser. Will keep this one in my files!
