Salmon with Onion Rings Recipe
Ingredients:
- 1 pound salmon fillet
- 1 onion, sliced into rings
- Freshly ground black pepper, to taste
Directions:
- Preheat the outdoor grill to medium heat and lightly oil the grate.
- Place the salmon fillet on a large sheet of aluminum foil.
- Arrange the onion rings on top of the salmon fillet.
- Season with freshly ground black pepper according to your taste.
- Wrap the foil around the salmon but leave the top open (do not seal it completely).
- Place the foil-wrapped salmon on the preheated grill and cover it.
- Grill for 15 minutes or until the salmon flakes easily when tested with a fork.

I have tried this dish several times and I appreciate its simplicity. On one occasion, I decided to experiment and the results were fantastic. I topped the salmon with onion rings and seasoned it with garlic powder, salt, freshly ground black pepper, and a squeeze of fresh lemon. I then wrapped it all up tightly in foil, placed it in a 400°C oven for 20 minutes. After that, I unwrapped the foil, added some red cooking wine, and cooked it for another 10 minutes. The salmon came out incredibly moist and flavorful. As a bonus tip, you can caramelize some onions, mix them with the cooked salmon, and add a tablespoon of low-fat mayo. Spread this mixture on bread of your choice and savor it however you like. For me, ketchup was the perfect complement.

I lined a piece of foil with olive oil and lemon juice, then added onion slices and minced garlic. Placing the fish on top, I filled it with fresh herbs and garlic before drizzling more olive oil and onions on top. After barbecuing for about 20 minutes, the dish turned out spectacular! I served it with tartar sauce, a fresh salad, and garlic bread.

As salmon isn't my top choice of fish, I typically prepare this dish for others. It's a distinct recipe using wild Alaskan Sockeye, which received positive feedback from everyone. Given the natural oiliness of this fish, I plan to skip using oil under the skin next time, as per recommendations. It's worth noting that sealing the foil is crucial to prevent the fish from drying out or undercooking, although this could be influenced by the cooking temperature.

This dish is delicious! However, the fish ended up a bit dry. I recommend incorporating some butter with the salmon next time. The onions provided a wonderful flavor to the fish! I opted for sweet Vidalia onions. Appreciate sharing the recipe!

Note: This review is based on following many of the suggestions provided, rather than sticking to the basic recipe. I followed the oven method as recommended, and included olive oil and lemon juice. The outcome was quite good! However, it lacked a bit of salt, which I presume would be necessary even when following the original recipe precisely.

I found this to be decent but not exceptional. I might give it another shot, possibly with fewer onions and a touch of olive oil and lemon.
