Sloppy Joe Casserole with Noodles Recipe

Ingredients:

  • Cooking spray
  • 8 ounces shell macaroni
  • 1 pound lean ground beef
  • 1 cups water
  • 1 (8 ounce) can tomato sauce
  • 1 (6 ounce) can tomato paste
  • 1 (1.3 ounce) envelope Sloppy Joe seasoning mix
  • 1 (16 ounce) package cottage cheese
  • cup shredded Cheddar cheese

Directions:

  1. Preheat the oven to 350F (175C). Coat a 2 -quart casserole dish with cooking spray.
  2. Bring a large pot of lightly salted water to a boil. Add the shell macaroni and cook, stirring occasionally, until al dente, about 8 minutes. Drain and set aside.
  3. While the macaroni is cooking, heat a large skillet over medium-high heat. Add the ground beef and cook, stirring frequently, until browned and crumbly, about 5 to 7 minutes. Drain the excess fat.
  4. To the skillet, add the water, tomato sauce, tomato paste, and Sloppy Joe seasoning mix. Stir to combine, then reduce the heat and let it simmer for about 10 minutes.
  5. Drain and rinse the cooked macaroni. Spread half of the macaroni evenly on the bottom of the prepared casserole dish.
  6. Top the macaroni with half of the cottage cheese, followed by half of the beef mixture.
  7. Repeat the layers, adding the remaining macaroni, cottage cheese, and beef mixture.
  8. Sprinkle the shredded Cheddar cheese evenly over the top of the casserole.
  9. Place the casserole in the preheated oven and bake for 35 to 40 minutes, or until the cheese is melted and bubbly.
  10. Remove from the oven and serve hot. Enjoy!

Cook's Note: This is a simple and versatile recipe. Feel free to add extra ingredients such as chopped onions, green peppers, or mushrooms for additional flavor and texture.

Marathon Runner Hubby & kids definitely enjoyed this recipe! I decided to double the recipe and added half an onion, some chopped garlic, and a variety of seasonings. I opted for using a can of manwich sloppy joe sauce instead of tomato sauce since it's my hubby's favorite. The only thing I wish I had more of was cottage cheese. Despite that, the dish turned out delicious! My children even learned how to brown the meat and cook the pasta in advance for a Scouting campout meal down the line. It was a hit in our household!

I added green pepper, shallot, and fresh mushrooms to the ground sirloin for this dish. I followed the recipe with elbow macaroni and drained the cottage cheese, as recommended by another reviewer. I found the flavor to be slightly lacking, but my boys enjoy a bit of zest, and I have to admit I do too. I will definitely make this again because it was so easy, and next time I'll add some Italian or Mexican spices. The sloppy joe mix I used was a basic, generic one.

My husband and I both enjoyed this dish a lot. Surprisingly, I forgot to add water to the sauce, but it still turned out wonderfully. I can imagine that adding too much water would make it watery. I plan to experiment with ricotta cheese next time, but overall, it was delicious!

This dish was decent, but it lacked flavor. Despite adding onion, garlic, salt, and red pepper, it still felt like it was missing that extra something. We'll eat the leftovers, but most likely won't be making it again.

This dish didn't impress us. It tasted rather plain. Perhaps if the ingredients were mixed together instead of layered. Additionally, it seems we aren't fond of sloppy Joe seasoning packets.

Great alternative to Sloppy Joes! I skipped the cottage cheese as we're not fans of it. You can use any pasta you have available! Definitely will be making it again.
