Steamed Walleye (Pickerel) on the Grill Recipe
Cook Time: 15 minutes
Ingredients:
- 8 (4 ounce) walleye fillets
- 2 sheets heavy-duty aluminum foil
- 4 tablespoons clarified butter, melted
- 4 tablespoons lemon juice
- Salt and black pepper to taste
- 1 large onion, sliced into rings
Directions:
- Preheat an outdoor grill to medium-high heat and lightly oil the grate.
- Place two walleye fillets on the center of a sheet of heavy-duty aluminum foil.
- Drizzle with 2 tablespoons of melted butter and 2 tablespoons of lemon juice, then season with salt and pepper.
- Top the fillets with half of the onion rings.
- Fold the sides of the foil over the fish and fold the ends several times to create an airtight pouch.
- Repeat steps 2 through 5 with the remaining ingredients to make another pouch.
- Place both pouches on the preheated grill and cook for 15 to 20 minutes, or until the fish is no longer opaque in the center and flakes easily with a fork.

DELICIOUS! Trying to get my hands on walleye in Texas can be a challenge, so I substituted with cod, which turned out beautifully flaky. I recommend adding a squeeze of fresh lemon at the end to enhance the flavor as most of it gets cooked away. Pro tip: when unwrapping the pouches, do it over a plate to catch all the delicious juices and avoid any mess. An absolute treat!
